I read this whole thread!!! . It only took me a week...
I'm just hanging out waiting for my tea. I have a nice new baby on top of my jar. I guess what I'll do is use the quarter gallon I've got going, the mother and the baby to start the next two gallon batches in one gallon jugs? Does that sound like enough? |

is anybody else having some mild anxiety about the brewing time taking longer now that its getting colder outside..and the house will be colder?? if my drink isnt ready in 6 days.............

That's about the point where mine stops growing on its regular rotation, and I bottle it and start on the new batch. Just how big is your scoby? I have started a new one with a very thin film of scoby, but the new tea and sugar beefs it up fairly quickly. I would suggest putting in fresh tea and sugar, just the regular recipe, and going for it, considering it good to go if you have a small scoby. Or maybe add another 1/8th of a cup of sugar or a bit less if you're concerned it's just not large enough to maybe give it some more food if you're wanting it to continue growing for another week or so.

My SCOBY keeps winding up sitting on bubbles if I don't move it every day or so... is that normal? I'm just growing the culture, not brewing yet.

I think LisaM was saying something about that too earlier in this thread. I thought it was really neat. Something about how if you are sick or have bacteria that shouldn't be there, when you touch the scoby that bacteria gets on it. It will then fight it off by producing what it needs to get rid of it for its own survival. That goes into the tea, and then it's tailored for you to have the good bacteria you specifically need.

ok, so this has nothing to do with making kombucha, but it is too funny not to share. Dh and I were texting back and forth yesterday. He was voice texting (for those who don't know what that is he speaks to his phone and it types it for him). Anyway I told him I was feeling off yesterday and this is the texts I got from him:
