Default weekend breakfast ideas?

I like to make something special for breakfast on Sundays, since we're up early but don't have to leave for church for a few hours. I often do waffles or pancakes, but I'm looking for new ideas. Although I love sweet/not so healthy breakfasts, I'm looking more for healthier ideas since we don't give ds sugar yet.

Thinking about french toast. We also do eggs/tortillas, which dh likes.

Other ideas? I've made baked oatmeal but never found a recipe that I loooved.

All healthy, super delicious, and a bonus is that it's crockpot so amazingly easy.

Thanks! My mom has made similar casseroles. DELICIOUS!! That looks so good, but probably a special occasion treat with so many eggs, bread, cream cheese, etc. It could get expensive (and I know it would disappear very quickly at our house!). Never made a frittata, but I'm sure dh would like that. The oatmeal looks good too. I've made a similar recipe in the crockpot but it takes much less time- think it was regular oatmeal.

Fritattas are nice because can assemble ahead and then bake in morning and serve with bagels etc. if you eat bread and sounds like you do

yea, if you want to cook it overnight you need to use steel cut. Regular oats will cook too quickly.

We love crustless quiche we grate up 2-3 carrots 1-2 potatoes and beat up dozen eggs add 1T sea salt 1 T Rosemary a bit of black pepper (1/2tsp.) mix it all together in a greased large casserole dish (9x13? Or one size bigger probably I can't remember the measurement ) and bake at 365 for 45minutes or until edges are golden brown.

Some times we add onions and sweet potatoes...some times we add peppers and onions and zucchini with the potatoes (squeeze/drain the zucchini!!)

Very versatile and we usually have it a few mornings a week for breakfast (1 breakfast for the 5 of us, and then some times a snack or the next day's breakfast for Dh and I).

Thanks for all the yummy ideas! I have a quiche recipe that I like, but I make it for dinner. Dh wouldn't mind having quiche for breakfast though too!

I found a crepes recipe that I had bookmarked, so I'm going to try that Sunday.

For all of you who make pancakes, do you have a great recipe? I never have buttermilk on hand, though I should probably just do the milk/vinegar trick (tried it with other things, but not pancakes). I found a recipe on All Recipes. It's okay, but the pancakes are pretty dense, I think.

Ooh we do crepes sometimes,but for dessert.
We also like oatmeal pancakes! And I never use buttermilk in my pancakes

I prepared this dish tonight and it's soaking in the fridge overnight. In the morning I'll just pop in the oven and the kids will have an amazing delicious healthy breakfast. http://www.recipe.com/blueberry-surp...ast-casserole/

I used whole wheat bread, and only added a small amount of real maple syrup as the only sweetener rather than the 1/2 cup it calls for. I'll probably top it with a little more real maple syrup when they dish it up.

It looks super delicious but I'll let you know their review tomorrow. It's a day off from school and my dh has the day off of work so it's sort of a weekend day for us.

I also found this recipe tonight and bookmarked it. Looks intriguing and like something I'd like to try. http://www.foodnetwork.com/recipes/f...casserole.html I haven't decided if i will because I'm not positive how the kids will react to the almonds. Dh and I do not eat bread, so it would be a meal only for the kids.

I like crockpot breakfast casserole. There are tons of recipes out there if you just do a search. I usually just ad-lib it.

Also you can make pancake muffins with pieces of breakfast meat in them if you eat meat, or with fruit in them. Just make pancake batter, pour it into muffin tins, then put sausage in a few of them, bacon in some others, maybe blueberries, etc.
