CREAMY MEXICAN SOUP
Olive oil 1 lb ground beef 5.5-6 oz chopped onions 4.5-5 oz chopped bell peppers 1 tsp chili powder 1/2 tsp cumin Salt and pepper to taste 16 oz can pinto beans, undrained 15 oz can black beans, undrained 10 oz can mild Rotel, undrained 1.2 oz chopped black olives 4 oz shredded Mexican blend cheese 5 oz shredded extra sharp cheddar Brown beef, onions, and bell peppers in oil with seasonings. Add beans, olives, and Rotel. Bring to a boil. Simmer for 10 minutes. Melt in cheeses.

I have tried the Hello Fresh subscription boxes recently. They are excellent but a bit pricey so I do them for three meals a week and cook frugal recipes the other evenings. I'm trying a Gousto box this week. Our recipes this week are : Double Chipotle Burgers, Coriander Chicken and Spiced Rice and Curried Fish with Coconut rice and lime.

Family reunion vacation all week so my bil is cooking dinners all week! Tonight was BBQ chicken thighs and breasts, fruit salad, veggie salad and baked potatoes

Last night... I browned 1.5# of ground beef with dried basil and parsley, then simmered a few minutes with a small can of tomato sauce. I mixed it with a bag of Walmart brand's frozen Mediterranean quinoa blend (quinoa, tomatoes, spinach, feta). Japanese blend veggies (frozen mix - broccoli, green beans, onions, mushrooms) on the side.
