Tonight was 'Italian noodles'--I chop a medium head of cauliflower and boil it in the same pot with a 1-lb package of pasta. Then saute a chopped onion, some garlic cloves, and 8-12 diced fresh tomatoes. Add 2 t. oregano and salt and pepper to taste. Mix in drained pasta and cauliflower. It's great with crumbled feta cheese if you have it

Friday was Italian meatballs (made with turkey and beef), gf pasta, homemade marinara, parmesan zucchini
Saturday and today is Pioneer Woman's Cheesy Cauliflower soup.

Dovenoir, I'm not sure. Would each package of tenders be about a pound? That would make it closer to two pounds. I've had a week's vacation from making dinner while I visited my grandma in her retirement community. She treated us to dinner in their nice dining room each night. A break is very refreshing, as I'm sure you all can imagine. I'm about ready to get home and roast lots of veggies.

I know! I'm so excited to post pictures again!!!!
I tried all the others recommended and could not for the life of me get the hang of them! Maybe that's a part of turning 40. This is back to photobucket. I have no clue. It works randomly and doesn't work even more often. I try when I remember. And share on the times it decides to function.

Grilled Chicken Kebab Bowls - I will probably change this up a little bit and use chicken broth for the rice rather rather than the water and consumme powder listed in the recipe and I think I will turn it into yellow rice adding some tumeric and saffron. I will add pita triangles to the side for those who can have it and I may top the bowls with a little feta cheese.
