I've done a few good ones. The first was a roast that I turned into french dip. It was so tender!
I did chicken for soft tacos. 1/2 - 1 cup chicken broth, 3 T tomato pastes, 3 T homemade taco seasoning. Stir. Add chicken breast. Pressure for 8 (I think.) minutes. Shred & serve. I've also done the noodles & sauce all in one. Super easy & yummy.

Rice Pilaf
Add things in this order (on top of each other): 1 lb gr beef, sauted in IP 4 rice-cups of brown rice 5 rice-cups of water 1/2 leek chopped 1 pkg frozen peas 1 tsp salt 10 min manual, 10 min natural release Stir and serve. Sent from my SAMSUNG-SM-G935A using Tapatalk

balsamic short ribs/chuck roast. It's out of a book but it's basically - brown meat on the saute settings. Take meat out, saute onions, carrots, garlic, celery, etc. Splash in some balsamic, maybe 1/3 c? and scrape the bits off the bottom. Add back in the meat, some extra broth making sure the meat is in the liquid, and cook under pressure for 45 minutes. It will be totally falling apart, but I get the meat out and then blend the remaining veggies and liquid with an immersion blender to make a gravy of sorts. Oh my goodness I'm hungry now!
I am intrigued by the idea of meatloaf.
