OOH, Schnitzel! I hadn't thought of that! Maybe next time - I put half in the freezer. I oven roasted the other half and we have enough leftovers for another dinner or a couple of lunches.
I've got pinto beans on the stove and quinoa flavored like Mexican Rice in the rice cooker for tonight. Dinner will probably end up being burritos.

We had London Broil, with sauteed peppers and onions, peas, and fried potatoes for dinner tonight.
With the amount of leftovers we've got, I'm not going to have to cook much for a few days! Perhaps I can spend more time baking. (I found a Boozy Biscotti recipe at Cook's Illustrated I want to try - cherries, spiced rum, and chocolate. )

We had a contractor working in our kitchen soup night so I picked up food and soup became last night. Tonight dc have to be at the soccer fields at 4 for a 445 game so no dinner tonight either. I need to plan a little better but already planning better than this time last year.

Both kids had a 4:45 soccer game (and both dh and I work) so small froz meal before we left and then snack foods with a movie afterwards (popcorn, pretzels with hummus, etc).
Tonight Im thinking Quiche. I need to run the grocery for anything but burgers, but the meat is frozen.

Last night we lost power. Dh made skillet potatoes in a cast iron skillet on the grill. The other kids & I got teriyaki takeout at 830pm on our way home from a speech tournament that was also impacted by the high winds & power outage.

Yesterday, I made potato leek soup with bacon in the instant pot, and then made an apple crisp using a variety of produce I had on hand - it had apples, pears, and zucchini in it. I had quite a bit of produce that needed to be used up, and doubled both recipes, so I managed to use up quite a bit so it didn't go to waste. There was alot of peeling, though!

I hate peeling.
I put a large roast, tons of potatoes and carrots, and a bag of frozen green beans in the crock pot for dinner tonight and lunch tomorrow after church.

I figured I needed to deal with the peeling before my wrist surgery coming up - I didn't want all of that to go to waste!
Knitlove - you are always eating the coolest stuff! I love the variety of interesting foods you make.
