I've got a gig tonight, so it's Cheesy Chicken in the IP and roasted cauliflower. (I made bacon at lunch, so I roasted the cauliflower in it. Have yet to see how it turned out. )

I'm going to try to make these cheese enchiladas with rice, chips and salsa and homemade guacamole, and lettuce salad with homemade ranch. I love enchiladas, but I just can't seem to get it right to make them at home. I'm trying this new recipe. Crossing my fingers that they are better than other recipes I've tried in the past!

I threw chicken, Rotel tomatoes, and corn in the crock pot for DH to make some tacos when he comes home from work.
