Re: What are you eating in August?

That sounds like a lovely meal. We're having meatballs, mashed potatoes, and green beans for dinner tonight. We're going to my IL's beach house tomorrow for a week; I'm trying to figure out what (and how much) to take with us. We do a lot of grilling and salads there because it's convenient and FIL has a garden. But it gets repetitive.

Re: What are you eating in August?
I love CB & Cabbage. But dd is a vegetarian and dh doesn't like. Ds likes it but he says if I;m going to do that , he'd rather have roast. So I just do it in March and make dd and dh fish sticks to eat instead.
TLDR: I'm on my way for dinner tonight.

Re: What are you eating in August?
I made Chipotle style food tonight. Cilantro lime rice, black beans, roasted corn, pico, sour cream and cheese. Fresh salsa.
My avocados were hard! Boo. I also made taco meat for people who would like that but I was fine sticking to the vegetarian options. Sent from my Pixel 3a using Tapatalk

The beef and crispy rice was a huge hit with my family. I think I saw someone asked about subbing for tofu in the comments of the recipe . ---------- Post added at 09:02 PM ---------- Previous post was at 09:00 PM ---------- I always think that about Charla's dinners!

Re: What are you eating in August?
TY. I try to participate here so I can get new ideas but a lot of them revolve around a main meat dish. Im going to put both of these on my to make list for the fall.

Re: What are you eating in August?
I've really been on a beet, pear, greens, feta, vinaigrette salad with steak kick. I've been getting beets in a produce basket I get every week, and they sent a recipe for this salad with the first basket I got from them. It is sooooo good. I have been making it at least once a week for the last month. That's what I had for dinner tonight.

Re: What are you eating in August?
How do you prep the beets for the salad? That sounds delicious.

Re: What are you eating in August?
Eggplant Parmesan today!
I used to LOVE Eggplant Parm. Obsessed with it long ago . . . before dc. Tried to make when married but before dc. It turned out terrible. The eggplant didnt cook right. However, I was just learning to cook back then, now I have a lot more experience under my belt. Im giong to make a pot of pasta for a side because 1. Wish me luck.
