Heartofjoy - what are vernon shanks? (Or is it a type of cut or a preparation method? Or did Autocorrect change venison? Curious minds!)

Also, my kids absolutely love popovers with soup.(The ones that will eat soup, that is. The anti-soup kids just eat the popovers.) Our favorite recipe is here. I usually double it.
yes, it should be venison shanks. Literally the legs of the deer. Usually we throw them away. But dh read about how good they were braised for hours so we tried it. I don't think it cooked long enough. Cooking time can be all over the place with wild game! They were ok.

Ok, ya'll. I need some recipes. Here are some of the meals that caught my eye -- if you have a link to the recipe that would be awesome!

Deanna, I'd also like your chicken and rice recipe (swipe keyboard does better with English!)

Also, it's good to see you posting again.

Arroz con pollo I'm doing an instant pot method but stove top is pretty much the same just added cook time

Rice 2 cups
Chicken I use boneless skinless thighs
Olive oil
Vinager
Cumin
Salt/pepper
Garlic
Cilantro
Goya brand recaito culantro or sofrito both work I'm using the fist today
Tomato sauce
Green olives
Cappers (optional)
Sazon seasoning packet (this I think does contain some gluten it's no enough to affect my low gluten kid but can easily be ommited it's honestly mostly to add color..)

Marinate chicken in olive oil vinager minced garlic cumin salt and pepper ideally at least 4 hours
Brown in instant pot both sides about 3-4 minutes per side with the cliantro and two table spoons culantro
Add rice
1.5 (little more) water or broth
Tomato sauce and seasoning pack
Add olives and cappers if using
Salt if needed
Seal rice cook feature 12 minutes de pressure for 10
Done

Tortillas I use the instant add water Masa. Combine two cups with about equal water till dough forms mix well dough should be pillow soft. We just hand Pat into shape. (I tell my kids we make tortilla maps) heat on skillet

Gouda grits and smoky brown butter shrimp - If I thought cheddar grits were very yummy, smoky gouda grits are out of this world!

Last night was buttery steak bites with mushrooms, delmonico potatoes, sauteed zucchini, lettuce with blue cheese dressing.

Tonight I'm going to make red beans and rice with sausage.

Those sound amazing Charla! Can I come eat at your house?

I made lemon chicken with roasted broccoli and potato bowls, garnished with toasted, slivered almonds.

DH and I are trying to eat healthy again....

Monday we had Korean Beef Tacos and Korean spicy noodles
Tuesday was Cajun Kielbasa, Shrimp, and veggies over brown rice.
Last night was chicken enchiladas with Mexican rice, refried beans, and a green salad.
Tonight I think I'm going to make Tikka Masala (crockpot), brown rice, naan, and roasted Indian cauliflower.

Tonight is Soup (canned) and Sandwiches (Tomato soup and grilled cheese for most of us and whatever ds will make his own soup and sandwich because he does not like either of those) because I drive the boys carpool and dd has track after school so we won't eat together anyway.

Creamy chicken piccata pasta with green beans (I had some chicken breasts already cooked and seasoned in the freezer for this)!
