Creative ideas for more veggies
I think the next time I rice cauliflower, I'll freeze it in silicone molds or ice cube trays. I froze it flat in quart bags which is not really conducive to just throwing a small amount into something.

I LOVE it roasted with olive oil and salt and pepper. We use it as a rice substitute for lots of sauces. Also shred it for a delicious coleslaw like salad. You can go through a ton throwing it in to any sort of soup.

I love cabbage fried in a pot. I use a liile rice bran oil and pink Himalayan salt and turmeric.

Lomein is a good one for adding vegetables. I use a pound of noodles and a bag of super blend veggies
Growing up we always had a salad before the meal. I add carrots to fajitas and hashbrowns We use a lot of veggies and a little meat to make stuffed buns. I dice zucchini and add it to spaghetti sauce |

I think I will do Egg Roll in a bowl Thursday I like the roasted idea, and especially balsamic vinegar, but DH is allergic.

I'm not sure what to do with the butternut squash since I don't really like it. I have seen lots of butternut squash soup recipes lately online. I add kale to potato soup, but I think you are dairy free so unsure how you would make a creamy soup. Maybe like a Zuppa Toscana? I do love orange veggies mixed with greens. I don't know why, but they just seem to go together. I wonder if there is a recipe that would combine butternut squash and kale.

Butternut squash is my favorite! I would just roast it and eat it! But here are a few of the favorite ways I use it:

I made this: Butternut Squash and Kale
Except I made WAY too much kale and couldn't toss them back together, so I ate them separately The frozen squash did not brown, but it was still very good!

Too late for this round but one of my go to with extra veggies, particularly something like butternut squash, is to cook it in with broth and then use an immersion blender to puree it all together. It makes a nice thick stew-like broth that my kids LOVE without the addition of more classic thickening ingredients like flour.
Today I made chicken bone broth in my IP. When it was done I added diced sweet potato, navy beans, a whole head of garlic (GREAT immune boosting) and a couple diced onions, cooked and then pureed it all together. Then of course added even more veggies that were not pureed. But the kids RAVE at the thicker consistency of the soup, while having no idea of the amazing immune boosting goodness they are eating.
