Default Legumes

Legumes are not something that we like that much around here, especially with some picky eaters, but I'm supposed to eat some pretty much every day on my new diet. So please share with me your best tasting legume recipes that will win us over to legumes. I'd especially be interested in black bean and lentil recipes. We love recipes with lots of flavor. I'm not allowed peanuts or soy, and I can't have eggs or gluten.

I'm loving hummus, but that's about it so far, except for the occasional pot of chili or black beans or refried beans with tacos.

My boys are currently in a phase of not being fans of beans, so one thing I do is cook them then blend them and add them to a dish. One recent meal they really liked involved pasta with kidney beans and eggplant (those two blended together) and tomatoes. (Plus onion, garlic, herbs, cheese.)

Any kind of soup or stew or dish that involves something like rice & veggies all mixed together can easily have lentils added.

Black bean "salsa" is a favorite hot weather meal/side. Drained/rinsed black beans, canned or frozen corn (or if you're more ambitious than me, cooked corn cut off the cob), chopped peppers &/or tomatoes, chopped fresh cilantro, lemon juice and salt to taste. If you like spicy, some chopped jalapeno would go well, oh and I think most recipes call for chopped onion but my kids don't like raw onion so I don't bother. Stir it all together and serve with tortilla chips (or eat it with a spoon).

I use lentils instead of ground beef for things like taco filling, but we're vegetarian, so I'm replacing "TVP" not real ground beef, don't know how well it would work for omnivores? I've also seen people mention adding lentils to the ground beef for things like taco filling to extend the meat (usually see it mentioned on "how to save money" but would work to increase your legume intake too.

Beyond that, we're pretty happy to just season black beans or pintos and eat them with rice and shredded cheese, so we keep it simple

I am not a great bean digester and do know that navy besns are supposed to be easiest to digest as well as yellow split peas and the garbanzos hummus is made from.You can make chili with beans or make another kind of dip out of pureed beans and olive oil and garlic and sea salt. Can also make a salad from rinsed canned black beans, avocado,diced tomato,frozen or raw corn thawed or cut off cob,parsley or cilantro,diced onion minced garlic with a dressing made from olive oil,lime juice and salt with cayenne if like things spicy and can be eaten wih corn chips.Wont work for CF diet obviously

Look at some Cubin black beans and rice recipies. They are one of my favorite.

Soak a bag of beans in water with a head of garlic cut in half, and onion cut in half and some peppers ( bell pepper would work, I use pablanos that I de seed because my dh and early bird don't like heat) after they have soaked over night. Chop up another onion, pepper and several cloves of garlic. Cook thoes in bacon fat then add broth and the drained beans, discard the things that soaked with them. I will some times cook the rice in the same pot other times I will cook the rice separate.

Ooooh, the MOST delicious way to eat black beans are in black bean brownies!!!! You get to eat a moist and delicious fudgy brownie AND get tons of black beans without even knowing it

For dinners, we do lots of navy beans, black beans, and lentils. My kids aren't particularly a fan of any of them, however, I tend to just throw them in as many dishes as I can and they never really complain. Chili, soup, rice and bean casserole. I like making lentil soup -- I have found lentils to be less powering and more subtle in a soup than the other beans.

Google says that snow peas and snap peas are actually legumes. Those are easy and delicious additions to any green salad, or a stir fry, or even raw.
