Your meals in July!
Did we really not start a thread for July??!!! I blame it on summer slacking.
So share your meals with us! We love to hear what you cooked. Sharing recipes is a bonus. Orange chicken stir fry. Served over rice for the kids and over zucchini noodles for dh and I. It was a hit! Will be a definite remake

I'm so glad you started it! I was thinking the same thing, but didn't start it myself because I'm a total summer slacker! My girls were at camp last week, DH is on a backpacking trip now, and we have VBS at church this week where they feed dinner. So I may not be super active, but still love seeing what everyone else cooks .

Life has been crazy busy so I'm just now searching out the July thread! Someone took me out to lunch after church which was a huge treat We ate at La Carreta. I had a taco, a beef enchilada, and rice and beans. Supper tonight was tuna salad on a slice of bread with garden fresh tomatoes. And some leftover buttermilk chocolate chip pancakes I made a couple days ago

I ate at my aunt's today. She made simple eggplant parmesan - sauteed eggplant with pasta sauce and shredded cheese.

Tonight my parents were over for dinner. We had crock pot balsamic shredded chicken served over rice. Mixed veggies, guac and chips, and fresh fruit and veggies on the side.

Tonight we were running g late and people showed up so we ate black eyed pea salsa.
But last night I got dinner cooked: Corn, chicken breast, carmilized onions with mushrooms and green beans.

Last night we had salmon melts. I forgot how much better those are with fresh tomatoes
Tonight maybe mac n cheese...if you had a container of cottage cheese that was 3 weeks past its sell-by date, but unopened, and when you opened it there were no crazy smells and no visible weird spots...you'd still use it, right?

Turned out great
We had it with a favorite zucchini recipe: slice into 1/4"-ish thick rounds, dip in egg and then a mixture of breadcrumbs+parmesan+Italian seasoning+garlic powder, bake on greased tray (I usually also spray the tops with oil) for 20-ish minutes at 375 then broil a bit. Serve with marinara sauce.

We were originally going to have an entire meal on the grill, but plans changed since the dish I had potatoes in exploded just a few minutes after I put it on the grill. I didn't have time to clean up the grill so we had oven broiled sausage and asparagus and George Foreman grilled peaches and rice instead of potatoes for the side.

No, no one was hurt. We weren't even out there because I came back in to grab the rest of the food to put on the grill and when I opened the lid of the grill, it took me a couple seconds for it to register why my potatoes were all were over the grill.
