The shrimp and polenta meal I made last week.
My meal this evening. I decided to add roasted Parmesan tomatoes to it to round it out a little better.

My parents are coming over for dinner. We're having Lemon Garlic Grilled Shrimp, Summer Macaroni Salad In Lemon-Thyme Dressing, a cabbage salad, and a Rustic Raspberry Lemon Cheesecake Tart for dessert.

Reviving this thread which has fallen in to apathy for a few days.
Tonight's dinner. Balsamic shredded roast, served over zucchini and topped with cheese for dh and I. Served into a loaded mashed potato bowl for the kids. Mashed white and sweet potatoes, topped with broccoli, shredded meat, gravy and then cheese.

Tonight was Garden Night - most everything came fresh from our little garden plot. We had Caprese Salad with fresh basil oil, grilled zucchini, and kale chips.

I made up a mexican type pile-on: Chicken breasts, rice, black beans, a mexican type sauce I made up (chicken broth, tomatoes, chilies, and mushrooms), cheddar, lettuce and diced fresh tomatoes.

My oldest came home from summer camp with a bit of a cough. So I decided that bone broth was in order.
I made beef bone broth in my instant pot (best device ever for bone broth!!!!) then turned the broth in to a wonderfully delicious immune boosting and healing beef lentil soup.

My Oldest is making tacos for dinner. (Well, nachos really.) We've got more garden produce to enjoy, so it's a bit of a hodgepodge - lettuce, tomato, carrots, radishes, cucumber, jalapeno and bell pepper, ground turkey and cheese. Maybe I'll cut up an avocado for her, too.

It is arugula dressed with lemon, olive oil, salt and pepper. It's so yummy! If you haven't had arugula before it is slightly bitter and spicy. I found it in a prewashed bag at Aldi's.
Tonight we had GF spaghetti, green beans and Greek salad.

I have had arugala, but never cooked. I will try that.
Tonight, dh brought home some food from his work, so I had a yummy salad and the kids had pizza. Last night, though, I made a new skillet chicken recipe. It had a creamy spinach/artichoke sauce. It was so good. I had mine by itself. Everyone else had theirs on top of ravioli, and we had a spring mix salad w/ vinaigrette.
