Put a pack of boneless ribs in crockpot. Add two cups of beef broth. Also three tbsps minced garlic and a tbsp minced onion. And whatever else makes you happy. Cook for eight hours. Mmmmmmmm.

I love this thread, but I usually feel like my meals are too boring to write out, so I just don't. But whatever, tonight we had boring burgers, oven roasted potatoes, and green beans.

That's not boring! Sounds super yummy! I love seeing what side dishes people put with things, because I get so stuck in a rut with my meals.

Hot hot hot here today so a self proclaimed heat ban of anything inside the house!
So we grilled. BBQ chicken thighs, grilled veggies, raw veggies and dip. Herb potatoes cooked in the crock pot.

I've used this recipe with some adjustments. I use my regular gas grill on low heat and it takes about 45 minutes, sometimes less. I keep checking. The main thing to remember is to make sure your oven proof dish is strong; I don't know if you remember my glass dish explosion from a few weeks ago. I love Yukon gold potatoes for this recipe and I leave out the lemon or lime because I don't like those flavors with potatoes.

My mom does potatoes and veggies in foil packets on the grill. She usually just dices the potatoes, but will parboil them sometimes. I think she tosses everything with olive oil and vinegar, usually balsamic, salt and pepper. It's really yummy, easy to clean up, and nothing falls between the grates into the fire. You could always add a little liquid (broth, etc.) to the packets to ensure some steam; they would cook faster.
