I've been baking for a baby shower all day: chocolate sugar cookies, meringues, and white bean hummus are all done. I have to assemble and frost a blackberry-lime cake, but the layers are baked.
Dinner is going to be simple - fish burgers from Costco, homemade oven fries, and frozen mixed veggies. Simple and admittedly boring, but my kids like it!

Tonight we had grilled brats and sauerkraut. Grilled veggies (sweet pepper, onion, mushrooms). Caramelized carrots (new recipe in the instant pot). Sauteed zucchini noodles.
I was too hungry to take pictures.

Frozen GF pizza - 2 varieties, both Chef Russo brand
GLUTEN-FREE MULBERRY Italian sausage, pepperoni, Canadian bacon, hamburger, and mozzarella, with our homemade pizza sauce. GLUTEN-FREE CHICKEN RUSTICA Grilled chicken, spinach, roma tomatoes, basil, all-natural mozzarella, feta cheese and garlic, with extra virgin olive oil sauce. So good We ate homemade guacamole later. And homemade buttermilk banana pancakes for brunch. I guess it was a comfort food sort of day

Eating Fantastically in August!
Last night I made quirky pizzas (random of whatever I could find: roast pumpkin, bacon, cauliflower Alfreddo sauce, mixed green leaves and some grated cheese). Did different variations on that. Invited a neighbour and her children. Hoping she doesn't think it was too weird but then she contributed some sausage lasagna and I've never heard of that either. Friendship made in heaven???!!!!
This morning I've been making English muffins (about to cook them see what happens) to go with eggs and mushroom and more green leaves. Tonight it's roast beef and whatever vegetables I can find to roast. There are lots of different recipes, vegan, df, otherwise. I made a df version (coconut oil instead of butter). So proud of myself for making the English muffins. I looked at a number, but in the end just followed this one although I looked around for cooking ideas and did them for a shorter time than the recipe said, and put them in the oven on low while the rest got cooked.

Go should go for it!
If you have it, use bread flour in the dough. Makes for a better texture. We try to grill off big batches of dough and freeze the extra for quick lunches.
