Wonderful Sausage Egg Bake

1 lb hot sausage
2 cups frozen hash browns thawed
½ cup chopped green pepper
2 cups milk
3 cups cheddar cheese shredded
½ tsp salt
12 eggs beaten

cook sausage until done
crumble & drain
place hash browns in lightly greased 13 x 9 dish
salt to taste
layer sausage cheese and green pepper
combine eggs & milk, stirring well
pour over casserole
bake at 350 degrees for 50 minutes

I have a pretty similar recipe and called it my "MIL Pancakes", not because she gave me the recipe....lol...but because when she was staying with us I made sure to make them to impress her lol.
I added blueberries to mine tho.
Very yummy.
Goes even better with real butter and real syrup warmed up or real Jam.

This is one recipe that is a tradition in our house, its called Christmas morning wifesaver, but its super good to be made if you ever have guests over, prepared night before and baked in the morning.

16 White bread, with crusts removed. 16
Ham slices(pkg. sliced ham works well)
Sharp cheddar cheese, sliced
6 Eggs 6
1/2 tsp. ea Salt & Pepper 2 mL ea.
1/2 tsp. Dry mustard 2 mL
1/4 cup Minced onion 50 mL ( I use green onion here, as it works just as well and I like it)
1/4 cup Green pepper, finely chopped 50 mL
1 to 2 tsp Worcestershire sauce 5 to 10 mL
3 cups Whole milk 750 mL
dash Hot pepper sauce dash
1/4 lb. Butter 125 g
Special K or Crushed Corn Flakes

In a 9" by 13" buttered, glass baking dish, put 8 pieces of bread. Add pieces to cover dish entirely. Cover bread with slices of ham. Lay slices of cheddar cheese on top of ham and then cover with slices of bread to make it like a sandwich. In a bowl, beat eggs, salt and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and hot pepper sauce. Pour over the sandwiches, cover and let stand in fridge. overnight.
In morning, melt 1/4 lb butter, pour over top. cover with special K or crushed corn flakes. Bake, uncovered, 1 hour at 350°F [180°C] Let sit 10 minutes before serving.

Three Bears' Porridge

At least, this is always how I imagined it as a child and I have spent *years* trying to come up with a recipe that is the consistency and flavor of that fantasy porridge. And this morning, I hit it! So here it is.

1/3 c oat bran
1/2 c cow's milk (I use lactose free organic)
1/2 c vanilla rice milk
1/8 tsp kosher salt
1 egg

Bring milks to a simmer; add salt and stir in oat bran. Turn off heat and cover; leave for 3-5 minutes. (I keep the pan on the stove eye and use the residual heat.) Meanwhile, beat egg in bowl and add, a little at a time, some of the hot oat bran to the egg. When the egg is "tempered" pour it into the oat bran and stir. Add milk to desired consistency. Cover and let sit another 5 minutes.

My mo mand I made these this afternoon and they were actually really good. We modified the recipe on the back of the quinoa flour bag, so it was a bit of an experiment, but for someone who can't have regular wheat pancakes, these would make a pretty decent substitute.

1/2 cup + 3 tsp. quinoa flour
1/2 cup steel cut oats
1 tbsp sugar (or whatever sugar substitute you wish you use--we used stevia)
1/2 tsp. salt
1 and 1/2 tsp baking powder
1 egg
1 cup milk
3 tbsp vegetable oil

Mix dry ingredients, then add egg, milk, and oil. Pour onto greased griddle. Flip when edges are dry and bubbles have formed. We topped with agave nectar instead of syrup and they were really good!

Jen's whole wheat apple cinnamon pancakes

2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon sea salt
2 tablespoons evaporated cane juice
1 teaspoon cinnamon
1 whole apple, peeled and finely diced
2 eggs, beaten
2 cups milk
2 tablespoons butter, melted

Sift flour, add dry ingredients, mix well. In a separate bowl beat eggs, than add apple, milk and butter. slowly mix dry ingredients with wet. Pour about 1/2 C batter onto a very hot griddle with melted butter (I use organic whipped earth balance). When bubbles form and edges start to cook, flip once.

Makes about 12 medium sized pancakes.

I like to serve w/fresh fruit and maple syrup or honey to dip in . The kids love 'em!

Jen's crustless spinach broccoli quiche

Its hard to post this, since I really just eyeball it, lol. But I'll try anyways. Its a modified South beach diet recipe:

1 pound bag of frozen chopped spinach
5 oz or so of cooked broccoli
6 eggs, beaten
2 Cups cheese (whatever you want. I like to mix it up and use any of the following: cheddar, romano, parmesan, cheddar, muenster, mozzarella, montery jack...)
about 2 Tablespoons sea salt
a few dashes pepper


Thaw spinach, drain well. Add beaten eggs to spinach. Chop broccoli finely, add to mixture. Add the remainder of the ingredients and mix well. Place in a buttered casserole dish (I think I use a 9X9) and bake until edges are brown, and the quiche looks 'set'. Enjoy! Freezes well.

*I like to switch add other things like chopped bell peppers, mushrooms, tomatoes, whatever veggies I have on hand. Sometimes I like chopped ham in it, too!
