hint: superstores do it by adding pudding mix to thier recipes.
my mom always adds applesauce to the recipes you cannot taste it and it makes it super moist

Moist White Cake

2 3/4 cups all purpose flour
1 1/2 cups + 2Tablespoons sugar
1 Tablespoon baking powder
3/4 cup butter
4 large egg whites + 1 large egg
3/4 cup sour cream + 1/4 cup water
2 teaspoons pure vanilla
1 teaspoon almond extract

Mix all the dry ingredients in a mixing bowl, using a mixer to aerate.
Add softened butter and mix to a "paste".
Add egg whites, one at a time, then mix in whole egg.Beat to build volume after each.
Whisk yogurt (or choice) with extracts and add to cake, 1/3 at a time, beating and keeping the mixture fluffy.
Grease and flour pans of choice: 2-8" or 9" round or square cake pans, or 1-9"x13" pan, or cupcake tins (using papers).
Bake at 325º-350º.Check at 5 minute intervals after 18-20 minutes for cupcakes or layer pans, 30 minutes for 9"x13".

I used a version of this recipe for my Pomegranate Lemonade Cupcakes that are in a contest right now....

I'm totally going to plug it here and say go VOTE for me.

I am working on a chocolate one, but it's not ready yet.

I have an orange butter cake recipe...YUM! With vanilla frosting it tastes like a dreamcycle.

Orange Butter Cake
~The Whimsical Bakehouse cookbook~

8 ounces unsalted butter (2 sticks)
2 cups sugar
6 large eggs
1 1/2 teaspoons pure vanilla extract
3 1/2 cups cake flour
1 tablespoon plus 1/2 tsp baking powder
3/4 teaspoon salt
3/4 cup milk
3/4 cup strained fresh orange juice
1 tablespoon grated orange zest

1. Grease two 10x3-inch round pans. Preheat the oven to 350 degrees. Have all ingredients at room temperature.

2. In the bowl of an electric mixer, beat butter and sugar at high speed until light and fluffy.

3. Add eggs and vanilla and beat well.

4. On a piece of waxed paper, sift together flour, baking powder, and salt.

5. Add the dry ingredients alternately to the butter and egg mixture with milk, orange juice, and orange zest.

6. Pour the batter into prepared pans. Bake for 20-30 minutes or until cake tester inserted in the middle comes out clean.

7. YIELDS: 9 cups of batter

Wendy, the trouble with your recipe is that it's so good, I have to make an extra batch of cupcakes so that *I* can eat it beforehand--because there sure aren't any left after the birthday parties! So yummy. :drool
