Leftover ham done in a brown sugar glaze, diced; white sauce, 4 cups, seasoned w/salt, pepper, & mustard; about 6.5 oz. whole wheat & 8 oz. regular small pasta; lots of Parmesan. Boil pasta, make white sauce in lg. pan, dip out 1 cup sauce & reserve, stir pasta & ham into pot, put into 9x13 casserole that has been rubbed w/olive oil, spread w/remaining 1 cup white sauce, sprinkle liberally w/Parmesan, bake at 400 deg. F until fragrant & well browned. Serve w/broccoli, cauliflower, & carrots.
ETA: This was also home lunch for a couple of days.

Chicken breasts sauteed in olive oil, butter, garlic powder, parsley, and salt and pepper over GF pasta, topped with freshly grated parmesan

zucchini bread pancakes with cinnamon cream cheese topping--way healthier than it sounds--and bacon DH has a business dinner tonight...trying not to be jealous. so the boys and I will have a fun supper. plus I haven't made a meal plan or gone to the grocery this week
last night was vegetable beef soup out of my freezer--I am so excited for soup season!

We had pancakes Sunday night, last night was take-out pizza and tonight is a new recipe I'm going to try: Skillet Chili Mac with guacamole and chips on the side.
