Default ALL veggie soup recipe?

I'm looking for something with a variety of veggies. No beans, starches, or meat, or milk.

Any ideas?

When you say no starches, does that include potatoes?

I have a vegetarian minestrone recipe that could be tweaked to your needs. The original recipe calls for

6 c. vegetable stock
2 c. chopped onions
1 c. chopped celery
1 c. chopped carrots
2 c. cubed potatoes
2 c. chopped cabbage
1 c. cut green beans (about 2" pieces)
3 c. cooked cannellini beans
1 c. pesto (without the pine nuts)

However, I have mixed and matched veggies and it still comes out good. You could sub sweet potatoes or butternut squash for the potatoes, kale or spinach for the cabbage (depending on preference), and I'd just add zucchini and yellow squash or other veggies in place of the cannellini beans. If you are completely dairy-free, you'd need to alter the pesto too... (make just a basil and olive oil paste? or just use a couple of bay leaves, and some oregano and basil as seasonings?) Maybe that's too much switching up but at least it gives a framework that you could build on.

To cook, I saute the onion/celery/carrots in some olive oil, add stock and bring to a boil. Add veggies and simmer until potatoes/squash are soft. Add pesto and adjust seasonings. If not using pesto, I'd add seasonings earlier...

I start with an onion and a couple cloves of garlic. You can add celery with leaves and half of your favorite pepper. Saute in olive oil. Add italian seasoning, basil or thyme. Add chooped veggies like zucchini, sweet potato, greens, pumpkin, anything you like or have around. Cover with water and a good squirt of Braggs or your favorite broth. You can do some spaghetti sauce. Cook till done.

You can do curry and a can of coconut milk if you omit the above spices.

I always saute my spices with onion in the oil for more flava

1 package Knorrs Veggie Soup mix
5 c water
1 c vegetable broth
1 carrot
1 stack celery
1 medium onion
1 clove garlic
1 can tomatoes(2 if you like it that way)
1/2 c. green beans
1 c okra
1 T sugar
1 bay leaf
I add basil and other spices to taste depending on my mood

Bring water to a boil. Add all other ingredients. Turn down and simmer for 2 hours.

base of chopped onion and minced garlic and oil or fat of choice and then nutritional yeast and loads of curry powder and parsley and dash pepper pr cayenne,sea salt water and then veggies of choice.I threw in a few handfuls of frozen mixed kind and added some leftover rice.My husb. said it was best soup he had ever had and I should market it sorry no exact amounts I just started with a couple Tblsp nutritional yeast and curry and added other stuff to taste and water in small amounts and played with it both of my kids liked it - even my pickier eater

When I was growing up my mom would make "refrigerator soup". Start with canned tomatoes, or tomato juice or both, then toss in whatever leftover veggies are in the fridge.

I love this recipe from Epicurious! I usually use chicken broth instead of water but you could use water or veggie broth.
