Re: July 2020 Dinners

I'm seeing our first tiny cucumbers and zucchini; they're not quite big enough to pick, but will be soon! I can't wait. I think I'm going to make a chicken and spaghetti squash casserole for dinner tonight. We have enough peas in the garden to pretty up a casserole, but not quite enough to serve as a separate side.

Re: July 2020 Dinners
Tonight I made quiche (one spinach and mushroom and one ham and spinach).
Tomorrow is my cold pasta salad (tortillinis, beans black and garbonzo, veggies, half a bottle of salad dressing). Then it's burritos, then stir fry. I may flip flop those last 2.

Re: July 2020 Dinners
I made a White Bean Stew tonight in the IP (cannelini beans, onion, garlic, rosemary, salt and pepper, 14 oz can fire-roasted tomatoes, water to cover). I stirred in some canned tuna and garlic confit at the end.
The kids ate mozzarella and tomato sandwiches. I need to plan for the week, too.

Re: July 2020 Dinners
Last night was pork & apple burgers with wedges and an apple salad.
Tonight was wilted mixed greens with bacon and eggs. Tomorrow is teriyaki meatballs with rice and salad. My kids are mad about all the salad.

Tonight we had beet and pear salad and I topped it with grilled steak. It is a recipe graciousmomma shared with me.

Re: July 2020 Dinners
Littlest asked for mashed potatoes (her favorite food!) this week.
So tonight it's Turkey and Ricotta sliders, mashed potatoes, and a veggie, probably glazed carrots. Maybe something with zucchini, because I have scads of it coming out of my garden! Then later this week: Pork Carnitas and THM Freshy Bowl (mixed bell pepper salad w/lemon-garlic dressing) Sweet and Sour (or Orange) Chicken, broccoli Probably Muffalettas or Caprese (Tomato-Mozzarella-Basil) subs

Re: July 2020 Dinners
We ended up with salad, roasted potatoes, and roasted corn on the cob.
It cooled down quickly around 6.
