DH and I are trying to lose weight and we're following a nutrition plan. I continually struggle with what to cook bc before we were eating junk all the time.
In the past few days I've made: Crustless Pizza Casserole in the IP Chicken Tortilla Soup minus the tortillas and added quinoa instead. GF pasta with tomato sauce and ricotta cheese Chicken Fajitas

I LOVE meatball subs! I should do that soon.
Last night we had Avocado Orange Quinoa Salad, and these garlic knots. The dough for these garlic knots is amazing. I first used it to make these homemade bagels....my family is IN LOVE and they are only 152 calories with 10 grams of protein each--and EASY.

Last night was pork chops cooked on the indoor grill, and Japanese blend veggies.
Night before was nachos. Night before that was chicken with mashed potatoes and gravy and Brussels sprouts. I don't remember past that...

Tonight is coconut curry chicken & rice soup.
I enjoy shepherd's pie but at least one of my children doesn't. he's the biggest eater too. I need a super fast, easy meal for tomorrow night. Coming up blank.

I finally got an Instant Pot! I've had some beef shank bones and oxtail languishing in the bottom my deep freeze from the last time we bought a side of beef. Originally I had wanted to make Pho, but don't have all the spices, so I googled and found a recipe for oxtail soup. The kids can be picky so I also made a pot of chicken fajita soup. We had popovers and steamed cauliflower and broccoli on the side.

Creamy chicken enchiladas. Really good! Shredded chicken, cream cheese, fresh chopped spinach, canned green chilies, cumin, sautéed onion...roll up in corn tortillas and bake at 350 for 20 minutes. Top with shredded cheese and put back in the oven for a few minutes. I left out the chicken and added extra spinach for the vegetarian. Sautéed green beans with onions and cherry tomatoes.

I had this recipe for chicken with pancetta, tomatoes, and chevre.
Pancetta is about $50/lb. So I cubed up cooked chicken and made a sauce with tomatoes, fresh basil, lots of garlic, some minced bacon, and served it over pasta with goat cheese. It was very good. Not sure about tomorrow. Friday I'm grilling hamburgers and baking frozen french fries as we'll have 9 kids here for dinner and a sleepover. And it's a ski school day so I'll be zonked out by dinner time. |

Dh and I just put steak, potatoes, carrots, celery, and green beans in the crockpot for tonight's supper. Last night we made LilacPhoenix's sausage pasta with spaghetti sauce. It was really yummy.
