Ground beef recipes
Ok, I have ground beef thawing for dinner tomorrow.
I can always go with one of the classics -- meatloaf, spaghetti and meatballs, chili, sloppy joes, BUT I also like adding to my rotation once in a while. It's primarily for the kids, so nothing too unique, but anyone have any fave ground beef recipes that their family adores?

One of my kids will eat egg roll in a bowl. Google for that trim healthy mama recipe.

We do mexican pasta mess.
Cook ground beef, and season with taco seasoning. Boil pasta. Toss (drained) pasta with ground beef, can of diced tomatoes, can of sliced olives, can of black beans, frozen corn (which cools it fast, so maybe thaw the corn or even heat it first), and shredded cheddar or, if you can find it, mexican cheese of some kind. Or there's taco bake (we go through a LOT of taco seasoning in our house at the moment. Fry beef and season, mix with diced tomatoes and corn in 9x13 pan, make a recipe of southern corn bread (the kind with no wheat flour added to the recipe, Joy of Cooking calls the kind with wheat "Northern" cornbread ) and pour overtop, bake per cornbread directions. |

We do Nacho Night a lot. Taco-seasoned ground beef and every type of shredded or finely chopped veggie I've got on hand, salsa, cheese, sour cream, and a bag of tortilla chips. My kids like to play Iron Chef with the ingredients - they each make a few "special" chips, describe them in excruciating detail as if they were on a cooking show, and rate each other's offerings. Drives dh nuts, but I think it's fun. Plus, they eat lots of veggies.

Needs a little tweaking (more veggies, no condensed soup), but I like the concept. I've got ground beef in the fridge, too and I'm a little bored with The Usual Suspects. Perhaps I'll make some bread dough in the morning and do hand pies. This dough makes absolutely FABULOUS hand pies. (The filling is good, too.)

Burritos or enchiladas.
Lasagna. Those are my 2 of my to ground beef dishes because I can make one beef and one vegetarian. (and Pasta is also nice bc the meat can be added separately but you already have that).

Sooooooo, what did you make??????
(We had the stuffed french bread. Oh my, do I have to make it again! I replaced the soup with a little bit of white sauce and some cream cheese and added a soffrito and an 8 oz bag of frozen spinach, but I'll bet your navy bean gravy would work well!)

I'm sure it can be replicated gf but I have not yet perfected (or truthfully tried...) the skill of gluten free bread making so I didn't think this would be the ideal place to start. Filing the idea for the future tho! Did you take any pictures?

Ummm, no. I'm a Techno Flunkie.
But meatloaf is good! And you've reminded me that I have to type out that gf bread recipe. There's a flax one, too that is hearty enough to work in this recipe. I'll try to get to that one as well.

We make Asian burritos. cook ground been. Add hoisin sauce and a bit of soy, and a dash (or more) of cayeene. Serve in tortillas with plum sauce, shredded carrots and shredded red cabbage.
