Last night we had taco salads with a really yummy salsa vinaigrette.
Tonight we're having our homeschool group over so we're cooking for 45! Just hamburgers, hot dogs, asian cabbage salad, watermelon, chips, and I made a couple of Texas sheet cakes.

It finally cooled down enough to use the oven!
Homemade gluten free chicken nuggets. The flours were a mixed of almond and coconut flour. Kids ate the nuggets as a part of their requested "loaded mashed potato bowl" which is something they had for the first time last year at summer camp and feel in LOVE! Mashed potatoes, veggies, chicken, gravy and cheese all piled in to one bowl. And here is the bowl of my kid who eats it gravy-less. You can see the components better

She has a deep dish pizza dough in the Silvana's kitchen book. I haven't tried it because my girls will only eat thin crust. I also haven't found a dairy free cheese that we like/ I feel good with buying and I have trouble thinking if deep dish with out cheese to stick it together.

Yesterday I made sauteed chicken mixed with canned sweet potatoes, green beans on the side. I drain the liquid from the sweet potatoes and reduce it until it's thick and syrupy. One of my 6-year-old's favorite meals
Our other meal yesterday was refried beans with homemade cheese sauce, canned tomatoes, and black olives.

Let the dough sit for a minute so the sparkling water can start to work its magic. This is not your typical dough...you will pour it onto your pizza pan and spread it out with a spatula. I recommend lining the pan with parchment paper. The first time I made it (on a stone without pp) it stuck. Make one large pizza or two smaller ones...you don't want this to be thick. You have to allow time for pre-baking, but there's no rising time. (Eta: I've used different gf baking blends with this) (That's a great gluten free/dairy free baking blog, btw. I have a lot of success with her recipes)

Spaghetti and meatballs tonight. Made pasta sauce from my garden tomatoes. Lots of hidden goodness in that sauce. Navy beans, zucchini, carrots, onions, garlic. All pureed in to it so the kids have no idea. Homemade gluten free meatballs (with coconut flour -- because I have a lot of coconut flour so it's my go to flour of choice right now ). Served over gluten free pasta or zucchini noodles.
