cracking eggs without getting the shells in?

Are you cracking the egg and then opening it with two hands? I used to do that and always got shells.
I have to do it in one swift motion, with one hand, to avoid shells. One handed egg cracking/opening is the way to go!

So my five year old dd did the flat crack this morning, as we always do. A piece of shell fell into the bowl. It wasn't too small of a piece. She tried to find it by moving the fork around but inadvertently started mixing the eggs. So I told her "I just learned a new trick. Let's dump it into a new bowl and the shell will stick to the bottom." After dumping back and forth twice, I finally poured little by little using the fork to separate the mixture. When it was almost out, we located the shell and pulled it out. This was a hilarious moment for the both of us!! I'm pretty sure the trick didn't work because the eggs were mostly mixed - user error.

It's fascinating the different methods that work for everyone! And some methods that some people swear by are a complete flop for others, and vice versa!

I think this is precisely why there is yet to be a scientific fool proof mathematical equation for the best egg cracking mechanism. Too much variance person to person.

For me it depends on the eggs. If the eggs have strong shells then the flat break is best. However sometimes I have gotten eggs that have really thin shells that seam to splinter and flake off from the membrane, with thoes I will crack on the edge of the bowl.
