Default gluten free lactose free high protein go to snacks

Margaret is constantly hungry she is also slightly under weight so she needs to eat. She eats a LOT of produce which is good but doesn't really pack much calorie wise and leaves her feeling hungry soon after. I'm looking for quick and easy for her to get high protein snacks. They have to be gluten free and lactose free (she can handle some dairy but not a lot) so like yogurt is good but she can only have a serving like 1-2 a week.

I might try nuts again but she has always refused them.. She will eat nut butters though so go figure. Wont touch hummus...

What types of nuts has she tries? Sun flower seeds are another option.

Would she eat nut butters with apple slices or celery (bumps on a log)?

Protein in a smoothie - nut or sun butter is good for that too, or silken tofu or soy milk if you are ok with soy. Or since you want something she could get herself make popsicles - ds likes a banana chocolate peanut butter popsicle.

Cooked meat/lunch meat or hard boiled eggs.

Homemade granola bars so you can keep them gluten-free (I love http://minimalistbaker.com/healthy-5...-granola-bars/).

Peanuts almonds cashews etc pumpkin and sunflower..she mostly refuses to even try more than dislikes them.

Gelatin in things like smoothies and sprinkled in oatmeal. If she will eat hard boiled eggs, boil however many you think she will eat ahead of time and keep them in the refrigerator and homemade pudding made with eggs and coconut milk. If she will eat meat, you can keep chunks of meat and fruit in the refrigerator and let her get those. I'll have to do some more thinking about it. Most of my family needs high protein snacks on hand or it's impossible to live with us, but we can have dairy.

Well I gave her a walnut and a pecan to try. In the past she has just refused but she was totally up to trying and said she likes both.
We have some peanutbutter and jam oatmeal bars in the oven (just used GF flour and GF oats so we will see how they come out).. Ive made instant puddings with like almond milk so I guess I could make some and pre portion it out.

I like THM's Chia Pud.

I think it's 3 tbsp of Chia Seeds and 1 cup of milk. Stir a few times in 4 hours. Sweeten to your liking. I use unsweeted almond milk and stevia.
