Our smoke detectors didn't like something I made, so I was sprinting from the kitchen to the smoke alarm to fan it off back to the stove to flip the toast to then all the windows to open them up... DH came home to quite a sight Sent from my iPhone using Tapatalk

For the Corn chowder I started by roasting slices of: 2 white onions 5 cloves of garlic 1 medium white potato ( to help thicken it up) 1 zucchini 1 yellow squash I roasted them at 400 with a bit of olive oil salt and pepper just untill they started to brown While they were roasting I took 2 c of chicken stock and boiled half a bunch of celery. Once the veggies had browned I scraped them off if the sheet pans and in to my blender. I added one can of coconut milk and blended it untill it was smooth. I then pulled all the celery out if the broth ( no one in my family like celery) added the blended milk and vegies to the broth. And finally tossed in a bag of frozen corn. The tomato soup uses the same general process where I roast the onion, garlic, and tomatoes then blend them with one can of coconut milk, I add a little of other so delicious coconut milk, and I add some sun dried tomatoes and tomato paste to the blender. I spent two days with my two best high school friends. We went out for dinner and drinks at a nice restaurant. I had a green field salad with veggies, roasted pumpkin seeds and feta with a grilled chicken breast with a mango margarita.

Homemade GF macaroni and cheese with sauteed chicken and grape tomatoes. Brussels sprouts for G and me, green beans for E. G is so funny He ate his 1/2 lb of Brussels sprouts first, then picked the tomatoes out of his pasta and ate them, then ate most of his chicken. Most of his pasta is still on his plate
