May 2020 Dinners
I'll start.
The family really liked Million Dollar Baked Penne from Carlsbad Cravings. Could easily be GF but it's pretty heavy on dairy. This is definitely going into the "cold nights" rotation. I didn't have provolone. I remembered buying sour cream but couldn't find it so thought it was a ghost memory. (Found it later. ) So I subbed cottage cheese. It was still really good. We had tacos. We get ground beef every week from the CSA we are a part of, so we basically have tacos every week now!

I had a tamale pie that I wasn't sure about at first but it came out alright.
I made homemade pinto beans with it. I usually make them the South Texas way with lots of chili powder but this time I decided to do much less chili powder and add cilantro and tomato and a touch of jalapeno. We had tacos for Cinco de Mayo last night - from pork carnitas. We have some form of tacos every week.
Tonight I think I'm going to roast chickens. I scored two just as the meat department guy was refilling the case at the grocery store. (It had been completely empty - half the meat cases were shut off this week.)

We have been having little chickens for lunch. Our grocery store had a huge bin of tiny frozen chickens for .88 /lb I have been cooking them two at a time and making that in to two lunches for us and then broth.

Last night we had chicken soft tacos. Super easy. Chicken breast in the IP. Shred & mix in tomato sauce mixed with taco seasoning. Serve in tortillas with toppings of your choice.

Last night we had a grilled dinner - steak and veggies (red pepper, mushrooms, zucchini and the last of the asparagus from the garden) and oven roasted crispy potatoes.
Tonight I'm planning on salmon and corn on the cob on the grill with wild rice pilaf and a spinach feta salad on the side.

My dh made homemade Fluff from his honey this morning (he keeps bees) and made the kids FlufferNutter sandwiches (on homemade bread, too!) for lunch.
To counter that Healthy High Note, I have two chickens roasting in the oven for dinner. I'm hoping for leftovers. Zucchini on the side.

Last night we had carnitas tacos and cilantro lime rice.
Tonight we had a Cajun Shrimp/Keilbasa sheet pan dinner over brown rice. Shocking that my whole family liked it a lot since it had a lot of veggies . They even asked me to make it again...I'm still kind of in disbelief.

I had leftover roasted vegetables, leftover chili meat, and strawberry rhubarb pie. No clue for tomorrow. |
