Before we went gluten free I made bread two times a week for us and some friends.

I need to start making our bread again, and I think I need a bread maker in order to make it work while home schooling.

Who does this?

Favoret recipes?

Machene recommendations?

What do I need to know about useing a bread machine?

I do this

I do not like my current bread machine. Prior to this, I had a William Sonoma machine that I got unused at a thrift store, and before that I had my original machine I got in the mid-90's That thing lasted forever!

What recipe do you use. I have a couple of bread recipes that I like, but don't get them made much.

I have not made very much gf bread. Is it true that you don't knead? If so, how much time and effort does a bread machine save if in either case you add ingredients and by hand you mix and pop into the oven? I want to start making bread again.

I have a very similar Zojirushi (this one - http://www.amazon.com/Zojirushi-BB-P...dp/B0067MQM48/) and it is a miracle machine. It is worth every penny, but it took us YEARS of looking before we got the courage to buy it. The bread it makes is truly perfect.

The 2 blades None of my machines had 2 blades, but this current machine DOES not stir well.

watching my mom has offered to buy me one as a Christmas gift. Which would be Wonderful. However I'm not sure if telling her we'd want a $200+ machine would fly...

Ya I don't know if that will go over here either. But my birthday is in Nov and I am guessing that I can ask her to get me the bread machene for both birthday and Christmas it might work.

Now I want to know some recipes that people have gotten to work well in there machines.

I have a bunch. I posted several recently in a milkmommy thread I think

This is our go-to favorite right now.

Honey and Oat Gluten Free Bread
2 cups baking mix (I mix my own, but any rice flour based one will do)
1 1/4 cups oat flour (make sure the flour is certified GF)

2 teaspoons yeast
1 1/4 teaspoons salt
1 1/4 teaspoons xanthan gum (unless it's included in the baking mix, which mine is)
3/4 cup warm milk (I use almond)
1/3 cup honey (agave or sugar works)
1/4 cup soft butter (I use olive or coconut oil)
3 large eggs

This is my go to right now.

Kim’s GF, DF Whole Grain Bread





3 large eggs lightly beaten

1 tsp apple cider vinegar

1/4 cup oil of choice (canola, olive, corn, coconut, grapeseed etc)

1 1/3 cup milk of choice – unsweetened (rice, hemp, almond, cows) warmed to about body temperature

1T +1 t honey

3 T brown sugar





1/2 cup sorghum flour

1/2 cup buckwheat flour

1 cup rice flour

1/2 cup tapioca flour

1/2 cup potato starch

3 t xanthan gum

1 1/2 t salt

2 1/4 t dry active yeast



optional add ins:

flax seeds

sesame seeds

sunflower seeds

add in a total of about a 1/4 cup



Directions:

Combine first 6 ingredients in bread maker pan.

Sift next 7 ingredients and then add it on top of liquid ingredients.

Toss in your add ins.

Make a little well in the dry ingredients and add the yeast in to the hole.

Start the bread maker. I do not have a bread maker that has a setting for gluten free bread. So during the initial mixing part I help it out a little. I use a soft spatula and scrape down the sides and help everything get all mixed in. GF bread needs less time as there is no need for additional punch downs like with wheat bread.





bread maker settings:



Basic

1.5 lb loaf

medium crust


Note: (accidentally added 4 eggs with good results)

originally written as..





1/2 cup millet,sorghum, quinoa, amaranth or buckwheat flour (choose one)

1/2 cup second choice of flour – millet, sorghum, quinoa, amaranth or buckwheat flour (choose one)

1 cup multi grain rice flour, brown rice flour or my favorite teff flour

1/2 cup tapioca flour

1/2 cup corn starch (potato starch works too)





Her machine allows her to program in personal recipes so I use the following settings:

No preheat

Knead 1 = 5 minutes

Knead 2 = 15 minutes

Rise = 60 minutes

Bake 50 minutes

Temp 340 degrees
