I like to cook any of the following in my crockpot, no soaking, just pick out rocks, rinse clean (wash) then put in cp and cover with plenty of water , add a slice of bacon and cook all day on low.
black beans pinto beans white beans red or kidney beans. We eat whatever kind of bean I cook with either rice or cornbread and a salad. or I'll slice romaine and serve that on top of the beans and rice with cheese and sour cream, salsa, whatever. We also eat hot sauce here on ours. I LOVE putting pintos on top of tastadoes and then putting sliced lettuce and fixins on top. I also like to cook lentils on my stove top. Then I'll season them with taco seasonings of all kinds and serve them as tacos or burritos. Lentils are fabulous this way. Or serve them with rice. OR, take the lentils and just salt them and put them in pasta sauce and serve over noodles. OR, use the lentils in place of meat or with meat in sloppy joe mixture. I also like to put drained smashed kidney beans in my meat loaf. I put black beans in my taco soup. I put white beans in my chicken chili. I LOVE to cook split pea soup. That is seriously the best soup there is. Just washed split peas, some carrot and onion, water. cook till tender and mushy. Then salt and pepper and serve with sprinkle of cheese and sour cream or scallions. Garbonzoes are another bean that we LOVE. I make hummus from them, or put them in a skillet after sauteeing onion and rotel together and then let it cook down and boy that stuff is GOOD. You can put eggplant in that too, plus or minus the green chilies..but you have to have tomato and onion to go with the garbonzos and the eggplant. Don't even get me started that is the best stuff!!!!! I have to run now but wanted to type some ideas in ... |

I like to sauté onions and beans in olive oil then add cooked rice. I'm sure I add some seasonings like salt, pepper and maybe garlic, parsley, chives...whatever looks good.
Also, this is my favorite rice recipe ever and you don't need to add anything to it if you don't want. You can eat it as the main dish by itself, add some left over meat and veggies for a "stir fry" type dish. I'm sure it's lovely with beans, I just have never done it. Yes lentil tacos are wonderful!!!
Okay, here's what I made the other day that came out well: 1 c. chopped celery 1 c. chopped onion 1 c. chopped bell pepper 1 clove garlic, finely chopped 1 tbsp oil 1.5 c. uncooked brown rice 2 c. peeled, cubed, cooked acorn squash 5-6 c. chicken stock 1 tbsp. fresh chopped (1 tsp. dry) thyme 2 tsp. fresh chopped (1/2 tsp. dry) oregano 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. red pepper sauce (I didn't have this so I added 1-2 tsp. sweet chili sauce. It kind of sounded the same ) 2 c. cooked beans (you can use any kind, really. I used pinto.) Heat oven to 375. Grease 9x13 pan. Saute celery, onion, bell pepper, and garlic in oil in a large skillet until slightly tender. Stir in rice. Cook 3 min. stirring frequently until rice is coated in oil (you might want to add another drizzle of oil if you're having a hard time coating the rice). Stir in remaining ingredients; spoon into casserole dish. Cover (even just with foil), and bake about 50 min. until rice is tender and liquid is absorbed. Serves 6-8. The acorn squash was really nice in it; it gave it a creamy kind of texture that was almost reminiscent of cheesy texture (or maybe I've been cooking df for too long ), and the whole thing had a nice flavor. If you're going to play with the spices go easy on the oregano and heavy on the thyme. Maybe some chili powder or cumin would be good as well! |
