What to do with a LOT of sour cream
I know it will keep a long time if I don't open it. But I have 9 lbs.
In my walmart grocery app, I realized I needed to add sour cream to my existing order. So I added the 3 lb tub of Daisy sour cream. And I got an error message, "please wait a few minutes before editing your order." Ok. I tried again in a few minutes, got the same message. Went and did something for a bit, came back and added it. This time it took. I got home from my pick-up today and found myself with THREE 3-lb tubs. We normally use sour cream on chili, Mexican foods, certain soups, and a few casseroles. I am going to do a search for muffins that use sour cream, too. Any other ideas? |

Re: What to do with a LOT of sour cream
In baking, if I am out of milk, I’ve used sour cream or yogurt, but mixed it with water. It turned out fine every time. It won’t use up a lot at once, but every little bit will help, maybe?

Re: What to do with a LOT of sour cream
I make a creamy chicken saucy thing (fancy name I know ) to serve over rice that uses sour cream and is delicious.
Throw chicken breast, broth, seasoning in IP. Pressure cook. Remove chicken and shred. Add sour cream to broth and let melt. Re-add shredded chicken. I guess it's sort of chicken stroganoff... But it's a fave of the kids and super easy.

Re: What to do with a LOT of sour cream
One of my favorite snacks is full-fat Greek yogurt mixed with honey and pecans. I think that Greek yogurt and sour cream taste very similar. So maybe try it like that?

Can't look for the link right now, but 100 days of real food has a very good chicken salad recipe with sour cream.

Re: What to do with a LOT of sour cream
Sour cream works well with cocoa - you'll find it in a lot of chocolate cake recipes. Also lemon and citrus cakes.
Sweetened, it's great in place of custard sauce (creme anglais) or even whipped cream. I use plain greek yogurt as a sub when I don't have sour cream or buttermilk. You can go the other way - use sour cream in a recipe where you'd normally use an acidic dairy. It's less tangy than buttermilk, so the flavor profile will be a little different, but you may like it better. You can thin it out with water or milk if need be. You can even use it for some of the cream cheese called for in recipes. It will break in sauces if not treated gently, though, so I'd add it at the end of cooking. I've had success subbing for some of the cream cheese in cheese coffee cakes. If you use it to sub for regular milk in baking, you might want to add a little baking soda (1/4 t per cup of flour) to take advantage of the acidity and get more rise. Not necessary, but fun to experiment with. Red velvet cake Chocolate cake Biscuits Scones Pancakes Waffles Coffee Cake (really good in a crumb cake!) Madeleines (Umm, yeah, I like to bake.)

Re: What to do with a LOT of sour cream
I’d freeze at least some of it if you can’t use it in time. It changes the texture but it’s ok in casseroles etc.

Re: What to do with a LOT of sour cream
Sour cream coffee cake - soooo good.
Any muffin/cake/quick bread recipe that calls for yogurt could use sour cream. Offer to neighbors? I've seen that a lot lately on my local social media groups.
