What are you doing with your leftovers?
My kids won't eat leftovers unless they are creatively made over. I feel really good about the two meals I made today with Christmas leftovers. And the kids ate them!
So for lunch I made ham, potato, corn chowder using the celery and carrots from the fresh veggie platter, leftover au gratin potatoes, leftover corn, and leftover ham. It was really good. And those that could have them had leftover rolls on the side. Tonight I made a ham pineapple stirfry using the leftover ham, of course, the rest of the celery from the veggie platter, and the leftover pepper strips also from the veggie platter. I used several other pantry ingredients and served it over rice. It wasn't maybe the best, but it was tasty enough. Tomorrow night, I think I will do some kind of ham with gf macaroni and cheese and then the rest of the ham will go in the freezer. For lunch, I think dh and I will eat the rest of the leftovers (brisket, swedish meatballs, green bean casserole, cranberry relish) as is and I'll make sandwiches for the kids. So what are your plans for the leftovers?

Our ham was small and I already froze a bunch and gave some to a friend (she has a traditional of making a ham salad she calls "ham and pickle" but wasn't offered leftovers to Christmas). We had sandwiches one day, I put some in my omelette another day, and we will have egg roll in a bowl with it tonight

No ham here, but turkey.
I make bone broth from the carcass. Make turkey vegetable soup one day and then can the rest of the broth for other uses. I will also make a variety of casseroles with the leftover meat. I usually do a shepherd's pie with chopped turkey and veggies on the bottom and mashed potatoes on top. Fried rice with turkey is fantastic. Fettucine alfredo with turkey is another fave.

DH made stir fry noodles and turkey. I made fried rice and turkey. He also made bow tie pasta to go with the gravy and turkey.

I saw a recipe for turkey and sweet potato taquitos with spiced-up cranberry sauce to dip. I really wanted to try it, but no one else in my family was interested.
So far we've had sandwiches and soup and turkey fried rice and turkey pumpkin enchiladas and I made cranberry sauce muffins.

We didn't have many leftovers, especially once dh and I had had turkey and stuffing sandwiches on Christmas Day, after the DC had gone to bed The rest of the meat got turned into more sandwiches over the next couple of days, and the vegetables into soup. We'll be finishing off things like crackers and cheese for the next few days, and the sweet things will take a little longer (most of them don't need to be eaten immediately anyway).
