I made a simple cheeseburger pasta today.
2 oz cheddar + .5 oz colbyjack melted with 1.5 oz heavy cream 2 oz (cooked weight) ground beef Canned diced tomatoes 2 oz (uncooked weight) GF pasta Onion powder, Celtic sea salt, freshly ground pepper

Tonight I made a sheet pan turkey dinner. It was amazing. Christmas dinner in one pan. Looked gorgeous and tasted delicious.

We have a potluck tonight for DS's basketball team. I'm making Beach Street Lemon Chicken Linguine. It's my go-to now when I'm making dinner for groups because it seems like something most people would eat (even kids) and the flavors are so fresh!

We had a busy day cutting down a tree and hauling the firewood home to keep us warm this winter (or at least a part of it...) so we needed a quick prep but filling meal when we got home,
We had tacos, guac and chips, with butter parmesan carrots on the side.

Last night we had baked potatoes with broccoli cheese sauce. The night before was baked chicken fajitas. Both were super low prep and delicious.
Tonight is pasta with meat sauce.

I'll be making sauteed chicken breasts with black beans and tomatoes, seasoned with onion powder, garlic powder, chili powder, cumin, Celtic sea salt, and freshly ground pepper. Avocados on the side. Cooking for two tonight

We had ruby chicken tonight: chicken breasts browned in a skillet and then cooked in a sauce of cranberries, OJ, sucanat, orange zest, cinnamon and ginger. Served over rice, with peas.
