Last night was my soup that is the love child of broccoli cheese soup and chicken noodle soup. It is SO GOOD. I make it with Velveeta

...I don't use Velveeta for anything else but I have tried both making a cheese sauce with real cheese and also making homemade Velveeta and it is just not the same. I use homemade bone broth so I figure it evens out

I did also add in a big handful of shredded cheddar to make it extra cheesy.

Here's the recipe if anyone is interested:
3 cups chicken broth
2 cups cooked, chopped chicken
16-20 oz. frozen chopped broccoli (one big bag plus a little extra, or two 10-oz boxes)
6 oz. egg noodles
1 lb Velveeta cheese (more or less), cut into chunks
3 cups milk

Bring the broth to a boil and add noodles and broccoli. Cook until noodles are nearly tender and broccoli has cooked. Add chicken. Turn the heat down and add the Velveeta (chunked so it will melt easily). Stir until melted, then add 3 cups of milk.

I tried a new recipe tonight and it was a great success!!! Everyone loved it. So I saved it to my fave recipe app.

Served with baked potatoes, steamed carrots and spinach salad.

Tacos tonight, quick and easy before we all went to the movies to see Rogue One.

I used the Skinny Taste recipe which used cumin, chili powder, paprika, salt, and tomato sauce instead of packaged taco seasoning. It was yummy. I cut the salt in half though, and I was glad I did (the recipe called for 2 t. for 2 lbs of meat).

450. Covered with foil for the first 30 minutes. Removed foil and cooked an additional about 20 minutes I think... Checked with the meat thermometer for correct doneness.

Crock pot Honey Dijon chicken, peas and carrots, cream of cauliflower soup.

Soup recipe came from ST Fast and Slow. It was lacking depth of flavor (just cauliflower and onions cooked in stock). If I had roasted it first, it would have had more flavor. I may do that next time because it did have a nice consistency for a side/first course. It would have been disappointing as a main dish. Chicken dish was adapted from ST recipe and it was a hit.
