Re: January's Dinners
We had chicken vegetable for soup for dinner. Lots of viruses flying around locally so we're trying to keep it at bay.

Re: January's Dinners
I tried this low-cal Baked Potato Soup (low cal because it's 1/2 cauliflower), spinach salad and herbed butter cheddar biscuits. The soup was so yummy! So happy to find a healthier alternative.

Re: January's Dinners
Trim Healthy Mama Wicked White chili in the crock pot with brown rice. (I had to sub ground turkey for the chicken breast, though.) They ALL ate it!! Well, Littlest only had a little rice, but she's 3 and doesn't eat anything.

Re: January's Dinners
Trying for super simple tonight...pasta bake. 1 lb pasta, 1 glass jar of sauce, 1 jar of water...I think it was about an hour on 350 degrees when I first tried it. One of my kids requested it for her next birthday, so I guess it's officially comfort food. It's mostly my version of a pantry/freezer dinner...we usually keep meatballs frozen, there's usually leftover cheese to sprinkle on top from other recipes, garlic bread can be just butter and garlic salt on toast, salad is optional or frozen veggies if we need another side.

http://www.simplyrecipes.com/recipes...on_and_olives/ I don't do the lemons or olives, and I do it as a freezer meal. Dump the seasonings, olive oil, garlic and chicken in a bag and freeze it. Automatic marinade! I bake it covered on a bed of onions. It's also good in the skillet. I had mine on salad and made rice for everyone else. I also made a couple pieces of salmon and that reminded me that my middle child (who tends to be selective) likes fish! Sent from my iPhone using Tapatalk

Re: January's Dinners
We had chili last night. Still using my garden grown heirloom tomatoes! (from the freezer of course). So delicious!
