Zucchini
I am going to do some baking with Zucchini. I just want to know do I peel it first or just shred it with peel on? Does it matter?

If you want to hide it better then peel it. My kids always know when there is zucchini in something if I don't peel it first. If I peel it they are none the wiser.

haha. true. i have a great rice and bean dish recipe that uses zuchinni, and it says that you can leave it unpeeled, so i guess either way is fine. Actually, i'll share the recipe with you in case you want to use up your zuchinni's.
16 oz. can diced tomatoes 16 oz. can kidney beans 1 cup uncooked (long-grain) white rice 1 and 1/2 cup sliced zuchinni (unpeeled) (end up being about 1 zuchinni) 2 tsp. chili powder 1 and 1/2 tsp. cumin 1/2 tsp. garlic salt 1/2 cup chopped green pepper (optional) 1/2 cup shredded mozzarella cheese (optional) Add water to the liquid drained from tomatoes to equal 2 and 2/3 cups. Combine ingredients (except for gr. pepper and cheese) in a 9x13 in. dish. Bake covered at 350 degrees for 45-60 minutes or until rice is cooked. If desired, sprinkle green pepper or cheese over top and heat until melted.
