I'm going to make something similar tonight: Asian pork chops with the seasonings you mentioned (may add some others) and I cook it under the broiler, rice, frozen veggie blend with added peppers, pineapple and mandarin oranges

Charla, I made that quick zucchini sautee with almonds last night and it was DELICIOUS and a hit! Thanks for the link!
We also had pot roast, gravy, potatoes and roasted veggies. So tonight's dinner is bone broth from the roast bones, then made in to a beef, vegetable and quinoa stew.

Burrito bowl (steak, sauteed bell peppers/onions/mushrooms, black beans, corn relish, sour cream, olives, cheese - there might have been more stuff in it, but I'm spoiled to P ordering and picking it up for me ) and guacamole and salsa and chips from Moe's

I feel like the queen of leftover magic tonight!
I basically did a clean out my fridge casserole. Mostly rice and thick veggie chicken soup, mixed together, topped with cheese and baked. Kids loved it. Even the one who complained about the soup the night before. And win for me because I HATE wasting food so everything gets used in some way.

Baked wild caught salmon, cheesy scalloped potatoes, roasted veggies (carrots, asparagus, pearl onions and garlic) and our new fave side dish, learned from this thread of the sauteed zucchini with toasted almonds.
