Just spent an hour making a meal plan for the next week. I really hate the process. I'm combining it with an Instant Pot Freezer Meal Plan that makes 10 meals. I'm only doing 9 of them. I'll prep them on Friday.
Cashew Chicken IP meal Starving Student Chicken/shrimp Omelettes (dh does these) Gen. Tso in IP w/ rice (I'm honestly not sure this one will happen due to schedule. We leave the house at 11:30 and don't return until 8:30. ) Cabbage Casserole IP meal (I'll be canning chicken. Trying the Savory Butcher (Zaycon replacement).) IP bootcamp meals include: Stuffed Zucchini Chuck Roast Chili Chicken Kale & Sweet Potato Stew Umami Pot Roast General Tso Chicken Avocado Taco boats Carnitas over Sweet potato mash Spaghetti squash spaghetti Coconut Chicken Curry

Blend in sauce pan:
1 cup consommé 1 cup brown sugar (I typically halve this) 2 Tbsp soy sauce 2 tsp chopped garlic I often add some cornstarch to thicken it as well. Let boil, remove from heat, pour over ribs in a 9x13 pan. Bake at 350 for an hour.

Everything sounds so good! Your families are blessed to have you cooking.
My dh ate at a work function tonight and my 20 yo is out of town, so I made a quick beef and broccoli dish for my 22yo to take to his overnight shift along with his regular bacon and eggs and fruit, and dd and I are having frozen gf pizza, broccoli, and gf brownies that she made.

This week we've had:
Korean beef bowls Honey lemon chicken Healthy spinach artichoke chicken bake. Dh found all these recipes and they were all hits. Thursdays he works until the early morning hours so I usually make breakfast for dinner. Tonight we're having French Toast again because we are overrun with eggs. |

We lost power last night, so ended up with fast food.
Still out of power this morning, so did Einstein bagels for breakfast. I assume all our fridge and freezer food wont be good by the time for dinner tonight. Maybe. If so I had stir fry planned (ds is on a stir fry / chinese food kick and its great bc I can do vegetarian and he is just as happy as if it had meat). We also lost at least 1 roof shingle, a gutter and our fence where a giant tree branch come down the roof, hit the gutter and finally landed on the fence. It was a very windy storm. eta: power co said eta of 6pm tonight. Pretty sure all fridge and freezer food will be ruined. Thats 25 hours without power.
