Turkey's not my favorite meat anyway, so maybe that's why I don't like the smell. It's not GROSS or anything, I think beef smelled worse.

I started another batch of bone beef broth tonight.

All of you talking about the nasty smell, I'm assuming it's cause you aren't using any seasoning right? I use my broth for soup so I load it up with herbs and spices and garlic and onion and other things like that and it makes my house smell totally delicious for the duration of the cooking.

So I get confused when I hear all the nasty smell talk. Am I making the right assumption as to why it's different?

I think the smell issue could just be preference. I don't mind beef broth smell either.
I strained my turkey bone broth today. It's a beautiful dark brown.

I asked for the turkey carcass from my dad's. His wife was I said I was going to make broth with it and my dad was interested in what I was going to do with "all that broth" We talked about it for a little while. He sent us home with the carcass and the extra broth from cooking the turkey

Turkey broth is my favorite, hands down.




It may be a nostalgic thing for me. My grandmother always used the bones to make a really yummy turkey soup with napa cabbage and udon noodles, I try but cannot replicate but the smell instantly takes me back.

I've not had turkey broth.

I did find that beef and lamb broth do have a stronger smell than chicken hands down. But, after 48 hours of ANY bone broth going, regardless of the animal, what herbs and vegs went in to the broth or not - ew. Not going near it any time soon.

DH has liked it (or so he says) and has kept up with the broth on weekdays. I need to get more fat to make more tallow and start some chicken bones today. I don't want to. There's so much to do and I really just want another day off. I've been running all weekend.

So I just strained my turkey broth this morning. My bones are still whole and not mushy and it's been going for 3 days. My last chicken carcass I could pinch the bones and they'd turn to mush (so I totally stuck them in the blender and ground them up, put em back in the broth and restrained it.)

Should I put it on for longer? start another broth using the same bones? just toss the carcass now? Hmmm

Well, DH made a call to our local Turkish place to get bones and fat (beef/veal) yesterday. At first the guy didn't know who he was until he said "And we started ordering fat from you as well" and the guy said "Ah yes brother, I can get that for your brother. No worries, we have you taken care of brother!" and when he went in I'm thinking ok, a couple bones and maybe a pound or so of fat. He came out with a BIG BAG, so I asked him if he also bought meat. He said no, but he saw they had marshmallows we can have - so he bought them.

I just looked at the stuff he got today, I have enough bones to make 3 pots, 6 liters full of broth!!! and I have enough fat to make a whole jar of tallow!! The butcher wasn't kidding us, he definitely "took care of" us. The bones and fat are free!

This is how I make tallow - except I don't have a food processor - so I just used the kitchen scissors to cut the fat as small as I could stand to cut it (hand pain) and just went from there.

We're using it the same way most people use lard, mostly frying or for additional oil for things right now. I finished it, and it fills 1 mason jar - so about 2 cups of tallow from that big ol' bag we got.

ETA: We aren't like frying fries or anything - just like bits of meat or whatever needs a tbs or so at a time.
