Re: June Dinners. What are you cooking?
I'm going to make a creamy gluten free penne pasta with zucchini, red bell pepper, mushrooms, and tomatoes (loosely based on this recipe) and a Greek salad on the side.

Re: June Dinners. What are you cooking?
I think we're doing tacos, too. A taco bar is probably the easiest way to get veggies in my kids.

It all sounds so good!

Tonight is cabbage roll casserole made in the IP. I've only ever baked it before. Fingers crossed it turns out. So much easier!

Re: June Dinners. What are you cooking?
This is the basic recipe I use: https://www.skinnytaste.com/fish-florentine/
I use frozen Mahi Mahi from Costco and I replace the red pepper with tomatoes and double the spinach (literally to 18 oz.) but I don't increase the sauce at all and trust me, there is still PLENTY of sauce. It's a really yummy recipe (see reviews). My somewhat picky DD19 literally licked her plate last night...we were all cracking up.

Re: June Dinners. What are you cooking?
Tortilla soup adapted to make in the IP. My recipe calls for refried beans. I left them out of the cooking part & will add them once I release pressure. It's warm & sunny but the recipe was requested by dd who is not feeling well. I'll humor her.
