Another edition of "Keep Or Toss?"
This one is a hard call for me.
About 11:15AM, a vacuum sealed package of one delightful, perfect, grass fed .6 lb filet mignon steak was found on the floor in front of our garage freezer. It was cool, as it had been out in the garage floor, but it was completely and totally thawed. It could have been out of the freezer as early as 4pm the previous day, or it would have been as late as 11pm. It must have slid off the shelf. If it helps, the low last night was 35 degrees, so the garage was probably around 50 degrees, I am guessing. The filet in question was for Christmas dinner. Obviously, if the vote is "keep", we would just be eating some really good stir fry tonight instead. So..... Keep or toss? And thanks for playing our game!

My garage floor is quite cool, and so is our weather. Also, I grew up with meat being left to thaw overnight in the kitchen sink for the next meal...and it is a steak so less surface area to be compromised. I would use the meat, and maybe cook it thoroughly just in case.

If it was still cool, I would totally cook it tonight and eat it. I am all about I'm sure it's fine, though, so take it for what it's worth. yum! Steak!

Cooking will kill off bacteria, but not any toxins they have created.

But, really what toxins develop? I should probably be better about how I thaw meat!

Speaking of fears of toxins, I simmered a turkey carcass all last night and turned it off about ten am. I left it alone until pm. I then removed the bones and noticed that I had forgotten to salt it last night. I boiled it again and left it simmering while I went to buy veggies. When I turned it down, I noticed a lot of little bubbles. That's normal right? I mean, it was boiled all night and not touched, it's ok to give it 5 hours to cool down before touching it. I often leave it out all night to cool and it was a chilly day (sixties).
