This one is a hard call for me.

About 11:15AM, a vacuum sealed package of one delightful, perfect, grass fed .6 lb filet mignon steak was found on the floor in front of our garage freezer.

It was cool, as it had been out in the garage floor, but it was completely and totally thawed.
It could have been out of the freezer as early as 4pm the previous day, or it would have been as late as 11pm. It must have slid off the shelf.
If it helps, the low last night was 35 degrees, so the garage was probably around 50 degrees, I am guessing.
The filet in question was for Christmas dinner. Obviously, if the vote is "keep", we would just be eating some really good stir fry tonight instead.

So.....
Keep or toss?

My garage floor is quite cool, and so is our weather. Also, I grew up with meat being left to thaw overnight in the kitchen sink for the next meal...and it is a steak so less surface area to be compromised. I would use the meat, and maybe cook it thoroughly just in case.

That is my fear.
I told DH what happened, and he said, "Please do not waste it on stir fry!" and asked if we could do fondue tonight. Um, that sounds great, but I am so not up to that....7 eaters, one fondue pot, and a tiny piece of meat. If we fondue, I will feel the need to do more meat, sauces, cheese and chocolate, too. Which means a store run with a sick child, a lot of chopping, and a big mess to clean up.

Maybe I can just cook the steak for dh and everyone else can have homemade pizza? I dunno....

Why could it not have been a cubed steak or something? I'd honestly just toss and not give it a second thought. But, we only get to eat these once a year because we get so few of them with our cow.

You can get toxins that are a result of certain types of bacteria growth. Fun nerdy food fact



anyway the amount of time that your meat was out and the temperature that it would have been at mean that either are very unlikely. I would definitely eat it

Speaking of fears of toxins, I simmered a turkey carcass all last night and turned it off about ten am. I left it alone until pm. I then removed the bones and noticed that I had forgotten to salt it last night. I boiled it again and left it simmering while I went to buy veggies. When I turned it down, I noticed a lot of little bubbles. That's normal right? I mean, it was boiled all night and not touched, it's ok to give it 5 hours to cool down before touching it. I often leave it out all night to cool and it was a chilly day (sixties).
