Re: What's for dinner in January?
I ended up making potato and broccoli soup tonight. I must go to the grocery store tomorrow if we hope to eat something other than frozen pizza.

Re: What's for dinner in January?
Zuppa toscana (potato kale soup)
As a Christmas gift, Hubby made me a meal plan for the week to try and make it easier on me. So tomorrow will be red beans and rice (and probably some sauteed spinach or a spinach salad), but I'm going to try cooking the beans in the crockpot this time. So I need to presoak them before bed. |

Zuppa Toscana. I think I'll make some. DH cooked stir fry fettuccini. I also had leftover coleslaw with it.

Re: What's for dinner in January?
today we had grilled sockeye salmon with roasted garlic broccoli and butter parm noodles.
Tomorrow I'm thinking of doing a meatloaf, mashed potatoes, and a spinach salad.

Re: What's for dinner in January?
I'll finally be back to cooking tonight after spending the holidays with our families eating SAD. I feel gross and so does DH...we need a detox with lots of veggies on the menu.
Unfortunately I still haven't made a meal plan or gone to the grocery... dreaded chores, even though I love cooking. We may do zuppa toscana tonight, because I think I have everything on hand.

Re: What's for dinner in January?
The children and I made a dinner menu for the whole month. Last night was roast chicken with Jamaican rice and peas, today is curry beef (Jamaican) with coco, dumpling and whatever else I find....maybe plantains and sweet potatoes. Tomorrow we will eat yesterday's leftovers and on Wednesday we will have tonight's leftovers. Thursday is scrambled eggs, bacon and some Afghan bread (going to an international supermarket on Thursday). Friday is home made pizza. Saturday is Mexican style arroz con pollo.

Re: What's for dinner in January?
The beans in the crockpot went great! It's never worked well for me that way before. They were still a bit soupier than I'd have liked, but I was very happy.

Re: What's for dinner in January?
tonight was supposed to be grilled porkchops. until DH came home and went straight to bed not feeling well I don't know how to work the grill and he is EXPERT at porkchops so I wouldn't dare try...but they had to be cooked tonight because I'd been thawing them in cold water on the counter (which I never do ). So the boys and I ate our sweet potato fries and peas with random chicken and turkey from the freezer, and I have to stay up late until the porkchops (with apples and onions) in the crockpot get cooked. Sigh.
