Re: October's Dinners
Well, I burned an entire pot of pepper jack fajita soup. It was awful, so we scrounged around for various things. So my plans for lunch tomorrow are up in the air as I was going to have leftover soup.

---------- Post added at 09:03 PM ---------- Previous post was at 09:01 PM ---------- I made lentil soup tonight, fast food style 1 lbs lentils, raw 4 cups broth (organic, but store bought, so WAY less flavor than homemade) 4 cups water 4 carros 1 cup frozen onions spices I turn the IP on saute while I am gathering ingredients, so it hardly takes any time to come to pressure as the liquid is already hot. 10 minutes in IP. Quick release. So whole meal was done in 25 min? Pureed half in Vitamix, added back to pot. Yum!

Re: October's Dinners
That lentil soup sounds good!
I made “good grub” from the THT cookbook. It was delicious! Roasted green beans on the side.

Re: October's Dinners
It did come out saltier than we prefer. In the future I will use less of the creole seasoning, or look for a lower sodium version.

Re: October's Dinners
I made knitlove's dish tonight.
Kind of. It's a thread about chicken thighs. http://www.gentlechristianmothers.co...38#post6110238 I put more of the seasonings in my bowl and my husband's bowl. I really wanted to be sure my kids were going to eat it. http://www.afeastfortheeyes.net/2012...-pressure.html I want to make this one....yummy!

Re: October's Dinners
I usually plan my dinners out well, but we have wildfires less than 2 miles from our house so I couldn't get to the market. I pulled stuff out of the freezer and was able to make Kielbasa and Shrimp Fried Rice....it was a surprising hit!

Re: October's Dinners
I made ground beef veggie stir fry with cashews over rice. I wanted to serve a side, but I haven't been to the grocery store this week and couldn't find a single suitable thing. I have a feeling the grocery bill might be high this week.
