I love this time of year and all of the wonderful produce. Your picture makes me want a sweet potato and they actually are not my favorite things in the world. I'm going to have to put them on the menu for next week. I love pairing sweet potatoes with deep dark greens like spinach like you did. They seem to go together for some reason.

Yesterday was vegetable fried rice.
Today might be either fast food or else just whatever is available and quick since ds has practice and dd a game and there is zero overlap on those and dh is working late due to a big project he is behind on.

Last night we had chicken fajita bowls. The recipe was for shrimp but I subbed chicken. I don't normally love bell peppers, but I made them anyway to get more veggies in and I actually really like them roasted like that!

Last night we had portobello mushroom pizzas and Greek salad.
Today I'm making a crockpot chicken and broth, and I'll serve some of the chicken and broth with broccoli cheddar rice and beets tonight and freeze.

Tonight wiggle worm is making dinner. Corn dog muffins. The recipe was in her chrichet magazine. I will need to write out our recipe for corn bread and help her some with melting the bacon grease and getting them in the oven, but she can do all the rest. I will try to have some veggie to go with them for at least me probably carrots, mostlikly no one else will eat them
