Dhal Soup

Very healing, especially great for treating a head cold.

1 medium onion, diced
4 cloves garlic, minced
1 teaspoon turmeric
1½ teaspoon cumin
1 teaspoon fresh ginger, finely grated
2 Tablespoons vegetable oil
3 Tablespoons lemon juice
1 cup dried red lentils
4 cups water
1 teaspoon salt

1. Heat the oil over medium heat in a large frying pan or saucepan.

2. Sauté the onion, garlic, and spices.

3. Add the water and dried lentils and bring to a boil.

4. Reduce heat to low, cover, and simmer until lentils are tender, about 45 minutes.
