I love creamy roast veggie soups-- like butternut squash or beet. And curry lentil soups like daal. And miso soups with lots of seaweed and tofu. And Korean soups with piles of seafood, spicy peppers and egg. And beans soups whipped up in the pressure cooker. And...and..and.. I could go on and on...

Just made Mariele's chili. Yum! Actually, DH made it. We didn't have tomato paste or tomato sauce, so used crushed tomatoes in place of both. He didn't drain the hamburger grease so it was really greasy but we ate it with rice, Dominican style, and it soaked it all up.

Oh, and we adapted it for the crockpot, basically doing all the frying, then dumping it into the crockpot for a couple of hours. Added the beans about 10 minutes before serving.

Mac and Cheese Chowder

1 (14 oz) can reduced-sodium chicken broth
1 cup water
1 (5.5 oz) package mac and cheese dinner mix
1 (14 oz) can cream style corn
1 cup chopped ham and/ or cooked chicken (I use canned chicken)
1/2 cup milk

1) In a large saucepan, bring chicken both and the water to a boil. Gradually add macaroni from mix. Reduce heat to medium-lw. Simmer, covered for 11 to 14 minutes or until tender.
2) Stir in cream corn, ham, milk, and contents or cheese packet. Cook and stir over medium heat until cooked through.

I just made this tonight! So yummy!

I discovered the. most. fantastic. tomato soup recipe a few weeks ago. Ok, and understand that I have *never* liked tomato soup. I tweaked it a bit to make it "Rwanda-friendly" and this is what it looks like:

Crazy Good Tomato Soup
1 T. olive oil
1 chopped onion
2 peeled and chopped carrots
3 cloves of garlic, chopped
4 c. diced fresh tomato (it's about 14 oz. of diced tomato for those of you who want to use cans)
2 c. chicken broth
1 t. balsamic vinegar
1 t. honey
1 1/2 c. cream
dried basil, oregano and rosemary

In a soup-pot, eat oil over med-high heat and add onion and carrots. Saute until soft. Add garlic and saute one minute more. Add tomatoes, broth, vinegar, honey and herbs. Bring to a boil. Cover and simmer on med. for 20 minutes. Blend soup (I have to do it in small batches in an Magic Bullet!) and add cream. Heat through.
