Pumpkin Mac n Cheese with Roasted Veggies. I was skeptical but the reviews were great, so I wanted to try it (because I always want more veggies in our diet!). It was really good! Even my kiddos liked it and DH especially did, and that says a lot since there was no meat in it! DS was at church so he didn't get to try it....he would have been the true test as my pickiest child.

Last night was pork chops, sweet potatoes, and Brussels sprouts. Don't know about tonight... I'm leaving about 5:45 to see B in her school Christmas program so I guess we'll eat together after.

Pasta with chicken sausage meatballs. I'm having sauteed veggies (peppers, onions, mushrooms) instead of pasta, though.

Dh had to work late tonight so I was cooking for just the kids. We went simple - french toast with fresh fruit.

I ended up eating nachos after I got home. Tomorrow evening I'll be on the road, so I'll eat leftovers for lunch, then a protein shake for supper.

My 8 year old was invited to a classmate's birthday party tonight. They are serving pizza so I said I would send in a gluten free pizza for him. Therefore i made pizza this evening. Figured if I was making for 1 I would make for all.
We also had roasted parmesan carrots on the side with fresh fruit.
