I notice you mentioned potato starch in your sourdough starter, Rachael...I use potato water (I whiz cooked potato with water int he blender) in my sourdough instead of plain water and *normally* that makes it rise nicely and have a softer texture.

Absolutely. Potato water makes any bread better. I use it in whole wheat yeast bread, too, to make a lighter, softer whole wheat bread.

You can use leftover mashed potatoes, or just bake a potato in the microwave and whiz some of it with water, skin and all. You can keep cooked potato in the freezer to use, too. I keep my potato water in a jar in the freezer and thaw as needed, then re-freeze. It makes a world of difference.

If you use butter and milk in your mashed potatoes and use that to make potato water, it makes extra good bread...

Haven't read all the replies but sourdough bread needs to rise *at least* 7 hours or you're not getting the benefits of sourdough bread (fully digestable nutrients, low glycemic, etc.).

Have you tried Serene Allison's recipe? It takes less than 20 minutes of hand-on time, you let it rise overnight and then bake when you wake up. Or, you can let it rise all day and then bake for dinner if you're a morning person.

I use a bread machine to make my sourdough bread and it always comes out yummy and rises well.

I have perfected it! LisaM, you're right - I just decided to heck with it, I will jsut count on the 6-7 hour rise. And it has been consistently yummy ever since!

Here is what I do (I can't post the whole recipe right now, but if you ladies like, I will later):

For Friday bread at 5pm, I begin Thurs. morning and do the first proof using the bread machine pan but mixing by hand. Twelve hours later, I do the second proof in the bread pan and let it sit overnight for another 12 hours. The next morning after breakfast, I put in the rest of the ingredients and set the bread machine on "dough." When the dough cycle finishes, I put it in a breadpan to rise, covered, in my warm oven. At this point, it's usually around 10-10:30am. The bread has until 4-5 to rise, and then I bake it for 30 minutes at 350. Perfecto!

If it happens to rise earlier than that, I can bake it earlier, no biggie.

The potato water, Tickle Momster, is simply leftover water from boiling potatoes or whizzing cooked potato with water in a blender. It can be as thin as the boiling water or like thick buttermilk - I have used the thicker consistency when I use leftover mashed potatoes whizzed with milk or water. You can always add more water or flour if the consistency of the dough is not right. You just replace the liquid called for in a recipe - milk, water, whatever - with the potato water.

I don't advise feeding your starter w/ potato water, though. I know some people do but you increase your chance of getting mold in your starter.

Serene Allison's recipe is truly SO easy. You mix the ingredients, knead with a wooden spoon for 5 minutes (it's the consistency of oatmeal) then put it in pans for 7 hours or overnight to rise, then bake. Onlu 1 knead and only 1 rise and it never comes oit like a brick, always soft.

You need to feed your starter exclusively on rye flour for best results.

I have *never* had sourdough come out well, it's always too dense and hard. And I love sourdough bread! I'm goign to bookmark this thread and see if I can make one work.

Mine does tend to be dense, I admit. But I rather like that; it's still soft. I may have to check out Serene Allison's recipe. But I have a starter from South Africa and I have to consider the nature of the starter in any recipe (for example, it was grown on whole wheat only, so I have to grind wheat berries to feed it. But I can use a combo of white and wheat when I make bread, which I do). ITA with LisaM - don't feed your starter with potato water.
