Last night was taco salad, one of my very favorite things to eat.
Tonight was sweet potato and chick pea curry with rice. It was pretty good. It was from Averiecooks.com, and is the same as her Thai chicken curry, which I make a lot and love, only it has sweet potatoes and chick peas. I totally forgot to add the spinach, though.

No, not really. I don't do anything special, it is just like a regular ground beef taco, but just put over romaine instead of in a tortilla or shell. I just love all the flavors of tacos and all the toppings, but I don't like the mess, so this way I get more veggies and can eat it with a fork. I don't even do dressing, just sour cream and salsa, just like I would put in a taco. Olives and cilantro are a must, though!

I have cilantro butter tilapia, veggie rice, and zucchini on the menu for tonight and I have sheet pan sausage and peppers, cheesy grits, and broccoli on the menu for tomorrow. I'm thinking about swapping them. I'm just not in the mood for fish.

Dh working late and having dinner at work. I'll probably just put some chicken wings in the air fryer. We have enough fresh produce to supplement them. So semi fend for self night.

Tonight it's frozen pizza. Thursday evenings are crazy because youth group is at 6 pm and we have to be up very early on Fridays.
Tomorrow is ski club day so it has to be a slow cooker meal. Pork chops have been crazy cheap lately. I'm making pork chops with rice and Trader Joe's cream of mushroom soup in the slow cooker. Salad on the side. Saturday we are going out for Thai food for my oldest's 17th birthday. Sunday is homemade pizza. Monday is homeschool co-op and I always do breakfast for dinner on co-op days. Scrambled eggs, sausage, and either pancakes or waffles. I like pancakes better but waffles are easier, no flipping. Tuesday will be panang curry from Jen at Carlsbad Cravings. I got some naan from Costco to go with. Wednesday will be homemade soup. Not sure what kind, yet. |

I had the kids put up 2 meal requests each, on the white board. Lots to choose from. Need to check it for tonight's meal.
Sunday will be lasagna. First time in years we are making it. We have been an almost dairy free household for 10 years or more. The kids can tolerate one cheese heavy meal a week. Trying this one. Looking forward to it!

Last night was cheap pizza (delivery, Papa Johns). I normally don't like Papa Johns but ds said lets order pizza to be delivered, Ill pay. And I said Ill split it with you.
ETA: tonight is parm garlic pasta with opt chicken. moved to tomorrow bc dh picked up steaks and sushi for lunch and that seemed like too much beef to have 2 times today: Burgers, meat or pumpkin/spinach burgers.

Super bowl sunday. I could care less about the game. However it's like the one day a year I make nacho dip and dd1 and I basically eat that for lunch and dinner.
I'll have hot dogs for dd2 and dh along with chips, grapes, cuties a veggie platter and some mini cupcakes.
