Last night was meatloaf, mashed potatoes, and peas. (Dd requested the meal that Jon always eats in the Garfield comics. )
Tonight will be veggie stir fry.

For Valentine's Day I tried this Chicken Thighs with Shallots in Red Wine Vinegar (Poulet Au Vinaigre) with white rice, baked sweet potatoes, and a caesar salad. Chocolate Lava Cakes for dessert.
It confirmed what I always thought.....I just don't like any chicken that's not the white meat. I bought a huge pack of thighs at Costco because a friend talked me into it because the thigh meat is so tender, but I just don't like the flavor .

For Valentine's Day, we had steak topped with mushrooms and blue cheese, baked sweet potatoes, asparagus, and kale caesar salad. For dessert dd made a gf pie crust and topped it with strawberries, whipped cream and chocolate sauce.
Tonight will be chicken tacos in the crockpot, refried beans, rice and homemade guacamole.

Count me in the same category with chicken thighs. I've only made one recipe that I could ever tolerate them in. Here it is in case it helps you to use them up. You might note it calls for bone in skinless thighs so the rice cooks right. I just pulled the skin off and it worked well. I might also note this is the first chicken and rice dish that I've made where the rice was actually cooked all the way through I'm guessing because I followed the recipes direction for the chicken placement over the rice.

Last night was ham with pineapple, slow cooker au gratin potatoes, green beans, arugula and spinach salad with lemon vinaigrette.
Tonight was panfried gluten free crispy tilapia with lemon butter pan sauce, rice, roasted broccoli. Tomorrow night I'm planning gf spaghetti bolognese, slow cooker creamy corn, simple greens with vinaigrette.

I liked the tilapia although I can't ever seem to eat a full piece of fish. My taste buds get tired of it so quickly. I do wish the breading would have stayed on better, but I'm sure that is probably due to not being able to use egg.

Oh wow, I got behind again in posting.
Monday we had mediterranean pasta, but I added several veggies that I needed to use up (bell peppers, shallots, zucchini) and Greek salad Tuesday - Tator Tot Crust Taco Pizza, lettuce salad with homemade ranch - I do feel a little bad about this meal because it is made from a ton of processed foods, but it sure did hit the spot that day Wednesday - Crockpot bbq chicken, crockpot cheesy potatoes, baked beans, coleslaw Thursday - Tempura battered tilapia, tempura onions and zucchini, homemade chinese hot mustard, baked sweet potatoes, arugula and spinach salad with lemon vinaigrette. The tempura didn't work very well, but I did eat a whole piece of fish (for those of you following my seafood thread saga) And you will have to check out the new March thread to find out what I'm serving tonight!
