spicy black bean soup?
DH likes a spicy black bean & rice soup - it's a convenient microwave brand/thing... from the natural food store (so not as bad)... but expensive. I'd like to find a recipe that's really good. I've tried some recipes, but they always get so thick and weird that he doesn't like them. Anyone have a really good recipe??

I do, but not in a format I can copy and paste. I will try typing it out tomorrow morning.
Instead of using flour as a thickener, you throw two cans of black beans in the blender with some spices and dump the last can in whole. I've only made it once but it kept very well. |

Spicy Black Bean Soup
1 onion, chopped 4 garlic cloves, minced 3 cans black beans 1/2 tsp red pepper 1 tsp cumin 15 oz vegetable broth (because I'm a vegetarian...you could also use chicken) 10 oz canned tomatoes with or without jalapenos 1 can corn Spray bottom of pot and sautee garlic with onion for about 5 minutes. Pour one can of beans in a blender with cumin, red pepper flakes, and onion mixture. Blend on high until smooth, about 30 seconds. Pour mixture into stockpot. Pour second can of beans into blender and add borth. Puree and add to stockpot. Add third can of beans (NOT pureed), tomatoes and corn into pot. After bringing to a boil, lower heat and simmer for 25 min. |
